Easy Pumpkin Muffins


Yes I know, pumpkin is everywhere.  I am honestly upset at places like Starbucks for ruining such a beautiful ingredient. Pumpkin doesn’t just have to be a fall flavor, it can be a winter, summer, spring, and fall flavor.  Also, it can be a breakfast, lunch, dinner, or dessert flavor.  These easy pumpkin muffins are a beautiful grab and go breakfast or accoutrement to any other stupendous flavors you have have created.

So, why my hatred for Starbucks and other coffee shops all over the world?  Because they market pumpkin with such a heavy hand, keep it present in our feeds, force market into our bubbles and then serve products that are called “Pumpkin” that DON’T EVEN HAVE PUMPKIN IN THEM!  I care because people are getting fed sugar bombs that have no pumpkin and then get upset when pumpkin doesn’t taste like that at home.  They are destroying a beautiful thing and abusing an ingredient!

Therefore, my job is to use these easy pumpkin muffins and recipes like my pumpkin spice latte to have you fall in love with pumpkin all over again without the false pretenses.

The Power of Pumpkin

What goes better with this time of the year than… Pumpkin?  It’s everywhere, right?  Well, for a good reason.  The pumpkin pie spices of cinnamon, nutmeg, ginger, and clove or allspice come together so beautifully to warm your soul in the crisp fall weather.  In addition, pumpkin is incredibly nutritious, packed with vitamins and, of course, in season so it is readily available and should be on your grocery list every week!

Did you know that Pumpkin is an amazing source of vitamin A, vitamin C, beta-carotene, and potassium, to name a few?  So, including pumpkin in your regular diet can help support eye health, lower blood pressure, and boost your immune system.  Also, it is low in calories, so you can indulge your sweet cravings without having to pay a hefty price.

Now that you know how awesome pumpkin is, do you need some more ideas for how to use pumpkin in some new recipes?  Well, I am here to help you with that, since I have tons of awesome pumpkin recipes on this site.  In addition to these muffins below, here are some of my favorites (including the famous Pumpkin Spice Latte):

Of course, you can make these Easy Pumpkin Muffins any time of the year using canned pumpkin puree but you will get the best of these nutritional benefits by preparing fresh pumpkin puree yourself.  After all, pumpkins are everywhere right now!

Easy Pumpkin Muffins

Are mornings crazy in your household?  Because this is a great base recipe, it is a great addition to include in your weekly meal prep.  You can make a big batch of these on the weekends to have a quick grab and go breakfast.  Also, it would be easy to change it up each week.  Try mixing in any of these additions, or a combo of them for a variety of flavors:

  • mini chocolate chips
  • dried cranberries
  • pumpkin seeds
  • golden raisins
  • cacao nibs
  • toasted coconut flakes

Easy Pumpkin Muffins
  1. Preheat oven to 400 degrees faranheit
  2. Sift the coconut flour and spices together, then add baking powder
  3. In a seperate mixing bowl, mix all remaining ingredients except walnuts until well blended
  4. Add the sifted flour and spices to the pumpkin puree and mix well
  5. Divide the batter between the muffin pans and sprinkle with chopped walnuts
  6. Bake for 15-18 minutes or until done
  7. Enjoy

  1. Am I supposed to melt down the coconut oil before adding it? I’m new to the Paleo lifestyle. And right now I have a lumpy egg mixture! Lol

      1. Check your Instagram post about these muffins with the ingredients LIST vs. the instructions. It says powder in the list and soda in the step by steps. I just took a stab and used both and they turned out SO AWESOME! Thank you!!
