Sorry it took a few days for me to get this recipe posted.  When I asked on Facebook which recipe everyone wanted first, the Paleo White Chocolate won by a landslide.  My intention was the post this the next day but life gets in the way sometimes.  We all have our ups and downs, and even though I was never down it doesn’t mean people weren’t trying to drag me there.  Little do they know, I am about as stubborn as they come and I can out will anyone.  Mainly because I just don’t like to give up so I keep fighting with the biggest smile on my face knowing that Sunny Days will come and I will still be there leading by example.  In my short tenure on this earth I have learned that no matter what happens or what people think, if you stay true to your morals and standards, no one can ever bring you down.  Lead by example and eventually everyone will follow.  And my preaching is over, now on to DELICIOUSNESS.

I really made this recipe so everyone could have a delicious dessert to bring to ANY holiday party and have it ready in literally 5 minutes.  You will be shocked at the Paleo or non paleo heads you turn with these ones.  Trust me, I tested these on about 15 people, only 5 of which were Paleo.  The rest just would not stop eating and I knew it was a winner.  Plus they just look sexy and I can tell you that sexy and delicious is the best combination you can have.  Oh crap, I forgot to mention in the first paragraph.  I am humbled to have been nominated for best recipe for Paleo Magazine with my Lemon Cucumber noodles and the best Food centric blog for the year.  I am not going to beg for votes, but if you think I deserve it, I would truly appreciate the vote.  You can vote HERE.

Raw Chocolate Pumpkin Pecan Macaroons

Serves: 12
  1. Combine your coconut, pecan flour, cocoa powder, cinnamon and salt in a bowl and mix well
  2. Add in your pumpkin, honey, coconut oil, and vanilla and stir well until all ingredients have been evenly incorporated
  3. Use a medium cookie scoop or tablespoon and scoop rounded balls onto a plate or cookie sheet
  4. Place in the refrigerator for at least an hour to solidify
  5. Store in the freezer or refrigerator and serve cold

    Im making these as a welcome back gift for someone who’s been recovering from surgery for the past 6 weeks and is returning to the box tonight! Anyway, my question is, can I substitute the pecan/almond flour for cashew flour?
    BTW I have already tried this recipe for valentines day (no substitutions) and they were a hit! Thanks :)

  4. i went back and watched the real food con video of you making this recipe several times to get all the ingredients written down – i had no idea you had it written out on your site! i did a search because i wanted to share it :) my husband and i LOVEEEEEEEE these SO much. they are addicting! i could eat a couple everyday… thanks so much for sharing!

  5. I watched you make these on the real food con and just tried them myself. Super easy to make and a yummy chocolate treat. By the way I really enjoyed watching your presentation, mainly because of your creativity in the kitchen and your “making a mess tastes better” rule. It inspires me to be myself in the kitchen and try anything…
