Cranberry Ginger Cookies

I couldn’t be happier with how these amazing Paleo Cranberry Ginger Cookies turned out.  It is taking all of my power not to eat the whole batch so I have plenty to share with friends.  I hope you all enjoy these delicious cookies and make, and remake, and share and then make again and keep the Paleo love spreading :) Enjoy

Serves: 20
  1. Preheat oven to 350 degrees fahrenheit
  2. Combine all the ingredients above except for cranberries in a mixing bowl and mix well with your hand mixer
  3. Fold in your dried cranberries and ensure an even distribution by hand
  4. Using your cookie scoop, place scoops of cookies on a parchment lined baking sheet leaving room between the cookies because they will slightly expand
  5. Using the back of a spoon or your hand, slightly flatten the cookies
  6. Bake in the oven for 10-15 minutes or until done but ensure you continually check it so you don't burn them, some peoples ovens will be hotter than others
  7. Remove from the oven, place on a cooling rack or plate
  8. Enjoy

  1. George, I’ve read multiple studies on how high quantities of almond flour are not healthy to ingest. Any thoughts on that? Have you read any similar studies that share that same concern?

  2. Oh, these were great! I didn’t have any ginger on hand so I used a table spoon of lemon extract- it’s now a light, “breakfast” cookie. Thanks for sharing : D

  3. Do you have any good recommendations to substitute the Almond flour. We are just starting out our Paleo eating, but have a daughter who is allergic to all nuts :( which is making some recipes hard.

  4. Just made large versions of these today, minus the ginger and plus some dark chocolate chips. Delish! :o)
