Coconut Sugar Grapefruit

It actually feels really weird sitting here typing a recipe. I know it seems like forever, and it has been.  I haven’t been doing much cooking, or blogging, or anything for that matter and it feels amazing to be back at it, especially when it’s simple and delicious.  Lindsey and I were walking around the farmers market last week and one of the farmers offered me a grapefruit sample.  The truth is, I have never liked grapefruit and decided to give it another try.  My mind was blown at how amazing this freshly picked fruit was and I had to make a recipe.  In getting back to the roots of what got me healthy, I decided to highlight the main ingredient and just compliment its flavors.

You can use whatever sweetener you choose. I will be doing it again with maple sugar for sure and maybe a mixture of both.  Lindsey had the great idea to use a caramel drizzle and then I wanted to add chocolate of course.  The possibilities as always are endless and that is the best part of cooking.  There is never a dull moment in the kitchen and we can always try and experiment with new things. Cooking really is the only recipe you need to live an abundant, joyful, and excited life. Candied Grape Fruit

Coconut Sugar Grapefruit

Serves: 4
  1. Preheat the oven to broil on HI
  2. Cut each grapefruit in half and then run a knife around each segment to loosen
  3. Place on a cookie sheet cut side up
  4. Sprinkle each grapefruit half with ½ tablespoon of coconut sugar
  5. Sprinkle each half with sea salt
  6. Place in the oven 5-7 inches from the broiler for 5 minutes
  7. Remove from the oven and use a creme brulee torch to brown the top of the grapefruits
  8. If you don't have a torch, keep them in the oven for another 5-10 minutes or until caramelized. Do not let them burn!!!!
  9. Enjoy as a side or a dessert by itself. You might want to try with some coconut milk ice cream :)
You may want to try melting down some Enjoy Life chocolate chips or dark chocolate and drizzling these grapefruits

  2. That really looks appetizing. I used to eat grapefruits with lots of sugar sprinkled over. Now that I’ve been trying Paleo, I have not dared to use sugar at all. I eat them without. I need to get used to it but it works.
    Seeing you using sugar (good sugars…or better sugars?) convinces me to do it too. In moderation. Every now and then. I also noticed that my taste buds react differently to sugar lately. What I once found just to taste now seems too sweet to me.

    Anyway, I purchased your book as kimdle edition yesterday and started reading it. I haven’t tried any recipe yet but I’ve leafed through them and looked at the ingredients. Your recipes are easy to make recipes with ingredients I already have in my kitchen or which are available even here in Germany. That’s good.
    But what I like most so far is both your approach to Paleo. I don’t like dogmatism. That turns me off immediately. Reading through your introduction, I couldn’t see any of it. You seem to be objective not obsessed, pragmatic and seem to have a lot of humor. That is good also. I like that.

    So…I think I’ve babbled enough already. But you have gained an interested reader here. Just saying.

  3. I could never understand the appeal of grapefruit until I tried it broiled with brown sugar sprinkled on top and melted into caramelized goodness. I haven’t had it for awhile but will definitely get some to try with coconut sugar or better yet, maple sugar broiled on top. Yum. Thanks for reminding me of a super easy recipe that tastes amazing.
