Fire Roasted Bacon Meatloaf

Serves: 4
  1. Preheat oven to 400 Degrees Fahrenheit
  2. If you have a meat grinder, use it to grind your bacon and beef together, if not mince your bacon as fine as possible and combine in a mixing bowl with your beef
  3. Add all remaining ingredients to the bowl, and using your hands mix well to ensure an even distribution of ingredients
  4. You can now form it into a loaf and put it in a pyrex dish, put it in a loaf pan, or form into meatballs and put in the pan
  5. Bake for an hour or until the meat is cooked through, internal temperature needs to be at least 165 Degrees F because of the bacon
  6. Remove from oven and let sit for 10-15 minutes before slicing and serving
  7. Serve drizzled with some Beasty BBQ Sauce
  8. Enjoy

  1. I made this last night but I think I did something wrong. It was very souppy. It could not be made into a loaf. Should I have drained the tomatoes? It tasted very good and the sauce too but just not firm.
    Also I froze the bacon first and it was easier to cut.

  2. This was delicious and I will definitely make it again. One change that I will make is to try and find a butcher that will ground the bacon for me or try myself in the food processor. It was very difficult to cut without cooking it first. Thanks George

  3. Damn. I excitedly saw “Fire Roasted” but was disappointed that no actual fire was involved in the making of this meatloaf. ;o)

  4. I just made this for dinner…and I’m pretty sure this is one of the most delicious foods I’ve ever had the pleasure of eating! Holy cow, I cannot believe how amazing this dish is. This might be my favorite Caveman food yet! Awesome job!
