Caveman Chili and "Rice"

A simple yet delicious Crock pot chili.  There are so many ways for you to modify this and make it to your liking.  Please just use this as a base and feel free to get creative, its the easiest way for you to experiment with your taste buds.  Add more vegetables, play with the meat combinations with turkey, bison, even chicken if you so please.  Don’t forget to share your outcomes and modifications and most of all, ENJOY!!!

Caveman Chili and Rice

Serves: 8
Caveman Chili
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 green bell peppers, chopped
  • 2 pounds ground chuck beef
  • 14 ounces tomatoes, canned, drained, chopped
  • 4 ounces green chilies, canned, chopped
  • 2 tsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp cayenne pepper
  • 1 tsp freshly ground black pepper
  • 1 tsp salt
  • 1 cup beef or chicken broth
Cauliflower Rice
  • 1 head of cauliflower, cut into florets
Caveman Chili
  1. In a saute pan, saute the onions, peppers, and garlic until they start to become soft
  2. Next add in the ground beef and cook until brown, then drain off the excess fat
  3. Transfer the meat and vegetables to your crock pot
  4. Add all the remaining ingredients and mix well
  5. Cover and cook on low for 6 hours
  6. Enjoy and serve over a bed of cauliflower rice
Cauliflower Rice
  1. Place all of your cauliflower florets into your food processor and blend down until you get the texture and consistency of rice
  2. Transfer to a microwaveable safe dish and cover, DO NOT ADD WATER
  3. Microwave on high for 5 minutes, remove from microwave, add some salt, pepper, and garlic to taste and serve
  4. Enjoy

  4. I just made the best tasting cauliflower rice with lime garlic and cilantro on the stove top in a frying pan, ahh died and when the cauliflower rice heaven !

  5. Have to say this rice is wonderful!!!! It’s going to be our staple side :) so many flavors can be added – just yum yum! We microwaved the ‘rice’ with some shredded almonds then stirred in a little garlic butter, and salt and pepper!!! Delicious!!!!!

    haha, that’s all I have to say about this recipe.. I was on a time crunch, and stupidly started this at 7pm, so cut the time short on cooking it, but even then… WOW. it was absolutely delicious.
    I added in some pineapples, since I don’t like spicy chili, and it still came out pretty awesome. Next time I make it, I’ll be sure to do it exactly to the recipe, but I already love it.

  7. Tasty chili! However, as I grew up in Louisiana and lived in Texas for a number of years, I found that we needed to ramp up the spices to suit our taste. (And no, two onions are definitely not excessive! :-) ) I threw in a good bit of chili powder (didn’t measure, just guessed), a bit more salt and black pepper, and some Slap Ya Mama (tasty good Cajun seasoning), and we added more tomatoes. That worked for us. I love the way the cauliflower “rice” turned out – good way to get in extra veggies! I expect I’ll use that method of preparing the cauliflower for other recipes as well.

  8. Okay, here we are trying to be healthy and stuff, and you’re using the microwave? In 5 minutes, you could have sauteed that cauliflower rice in some coconut oil–just sayin’…
