Well I am back in Southern California, and it has been great to see everyone back here in my life. I can’t believe I was gone for like 6 weeks but now is the time to get back into the swing of things the best I can. Had some amazing trips and made some HUGE life decisions that will be coming to light shortly. And just know that these decisions are all based on all the amazing people that read my blog and I will always need and love your support. You all drive me to be great and I want to fulfill that. So if you read my last post, I got a little out of Paleo nutrition whack so right now I am back on the 21 Day Sugar Detox kicking myself back on track. I decided I would make a new 21 Day Sugar Detox friendly recipe and it is AMAZING. Thanks for my best friend Lani for the idea and my amazing new toy, the Spiral Slicer for making it possible. And here is my new Spiral Slicer’s first product, a 6 Foot Cucumber Noodle
- 1 whole cucumber
- 1 whole lemon, zested and juiced
- 1 tablespoon sea salt
- 1 teaspoon cumin
- To make the cucumber into noodles I used my new Spiral Slicer I got off of amazon. You could also use a Julienne Peeler or just make this recipe with diced cucumber
- Once your cucumber is prepared how you like it, place it in a bowl and toss with the lemon juice, sea salt, and cumin
- Transfer to a bowl and garnish with lemon zest
- Enjoy

Yippee!!! Something else I can make with my new spiral slicer (one of my Christmas presents to myself…) This looks like a nice, light cool side… which I eat most of the year here in central FL.
This is DELICIOUS! I just made it with the Lime Cumin Pork Chop recipe. Fantastic combo with both having the cumin. I peeled my cukes, then just grated them on the larger grate of a my retired cheese grater. Fantastic and QUICK.

My first thought when I found this recipe is that it would be an excellent paleo base for a cold vietnamese “noodle” salad. I’m gonna get myself a julienne peeler and give it a shot. Thanks for the inspiration!

I just bought this spiral splicer (actually using your link in this post) and have to say that was a great investment!! I have been missing noodles, and these are really the best!! I’ve tried the kelp noodles and they just are not for me. But these veggie noodles, I tell ya, something else!! And my three-year-old loves them too, so win-win!! Thanks for the link!! I FINALLY caved and bought a julienne peeler after seeing all your awesome uses for it. Why did I wait so long? The ‘noodles’ were so easy to make and refreshing. Whenever I have an extra cucumber about to go bad I quickly make this as a small side dish. Also used curry powder once and it was good too, I’ll have to keep experimenting!

So glad you enjoyed. And the transparant watermark is done by controlling the opacity in photoshop

The recipe was pretty good but a little salty from the 1 tbsp of salt. I added some New Mexico chili powder to give it a kick. I think I’ll use 1 tsp of salt next time. Good base though.

Got my slicer yesterday and just made this. Didn’t have lemon so used coconut vinegar instead. Yummy! Thanks for the recipe.

Thank you so much for the link to the spiral slicer!! I am in love!! Was able to make some zucchini and squash “spaghetti” that even the kids (8 & 10) help make and enjoy! Now to play around and see what else I can slice into noodles!!! LOL!

U just eat the noodles plain or do u use with other recipes. Looks light and refreshing! I need a slicer. I would live that for zucchini!
I just used this one as a side dish but you can add chicken, shrimp etc. Go to town with possibilities
