Grilled Guacamole

So I had made a Guacamole last week which was a huge hit to the party I brought it too but I still didn’t think that it was a stand out dish.  The fact that I ate it was amazing as I just introduced avocados into my life about 2 months ago but I still felt I could do something better with a slight tweak.

Oh but before I attempt to tell you that story while I sporadically jump around on tangents with no organization what so ever, here is my delicious almond milk latte from the awesome Ryan Bros Coffee :)

Took me a week but I figured it out on my Saturday morning ritual of an Almond Milk Latte and the farmers with my BFF Jen from Cutting Edge Kettlebells did the trick for me.  But before I tell you how, you should probably go like her page and say thank you since most of my recipes come from her Challenges or requests for me to try, so all the great food you make is in part thanks to here.  Virtual High Five Jen :).  Oh yea but what fixed the guacamole, Duh.  Forgive my ADHD this morning, I am only halfway through that delicious Almond Milk Latte pictured above.  Well there was a vendor at the market who presses his own avocado oil and infuses it with either lemon or lime.  Well I got the lime was because it was highly recommended and Voila all fixed.  How you ask, simple.  I just sauteed some of the ingredients in it prior to the guacamole creation process and it worked like a charm.  Nothing wrong with enhancing two of the flavors already in the recipe, right?  Hell, half the crap I come up with is just throwing stuff together or finding something that has been done and completely flipping it around and making it mine.  So it worked this time :)

Whoop Latte done but now enhancing my lack of attention to what I am writing and just had another thought.  If you didn’t know I got a new camera, WHOOP WHOOP.  And for the record I realize I just used “WHOOP” 4 times now in under 3 lines of text and that is ridiculous, and in case you were wondering, out of habit I spoke them in the coffee shop I am in right now, that got me some funny looks since they have no idea I am typing a blog post, HAHA.  But back to the camera it is a beautiful Canon T3i with the “Nifty Fifty” lens as they call it to get some nice close ups of the food.  I know there are way better cameras but this is my first ever DSLR and I am clueless on how to use it, but lots and trial and error are helping.  Oh btw, go high five Hayley and Bill from The Food Lovers Primal Palate, why you ask, for the skype session in which they tutored me on food photos.  They are my Mr. and Mrs. Miyagi :)  

Oh Crap I am all over the place again, well yea the camera……….The most important thing is has taught me, that its not the camera that makes the picture, its the lighting and your creativeness.  The only pictures on this post taken with the DSLR was the very top one of the guacamole in avocado shells and the latte picture. This lovely parfait dish of Guacamole was taken with my Canon Point and Shoot.  This just proves that the art is with the artist, not the tools so just in case you want to take pictures, do the opposite of what I did.  Go read first and figure out how to photograph food, then decide if you want or NEED a new camera.  But in case you haven’t figure it out yet with my scrambling brain, I am bass ackwards sometimes but life happens and you just learn from it.  

Well that was enough blabbing to last you a good minute if you decided to waste it, so without further adieu here is the yummy recipe.  Enjoy.

Servings: 3-4
Prep Time: 15 Minutes
Cook Time: 15 Minutes

Ingredients:

  • 2 Ripe Reed Avocados, grilled
  • Juice of 1 Lime
  • 1 Serrano Pepper, minced
  • 1/2 Red Onion, minced
  • 2 Cloves garlic, minced
  • 1-2 Cups Grape tomatoes, sliced
  • Handful of Cilantro, chopped
  • Salt and Pepper to taste
  • Avocado Oil (Mine was lime infused)
Process:

 

  1. Preheat your grill on medium heat
  2. Cut your avocados in half, remove the seed, and carefully remove the skin keeping the avocado as intact as possible.  Set your shells aside if you want to get creative with plating and serving
  3. Coat your grill surface with some olive oil or grill spray and place your avocados on the grill
  4. Grill your avocados on both sides until you have some beautiful char marks
  5. Once your done with the grill, chunk your avocados and place in a bowl
  6. In a saute pan over medium heat, using avocado oil, saute your sliced grape tomatoes and minced serrano chile until your tomatoes are very well cooked and tender
  7. Add your pan ingredients to the mixing bowl with the avocados and add the remaining ingredients and mix well
  8. Taste test and adjust the recipe as needed, you can add as much salt and pepper as your want or add a little lime juice for flavor.  I left the tomatoes as 1-2 Cups so you can use your taste preference on what you would like
  9. Serve immediately or get creative and place your guac in the half shells of the avocado and serve on a platter
  10. Enjoy

    This looks delicious! Although the only thing I think it is missing is bacon (a la Juli Bauer)! Grilled bacon guac is pure heaven

    I’m always looking for different (more difficult is more like it) recipes for my wife to make on the grill when we go tailgating at Bronco home games. My wife loves to grill so I do the kitchen work but the grilling is the easiest and since she thinks like a man I can see why she likes to grill. Grilled Guacamole is PERFECT for her to make next time and I bet she’ll do it since she is crazy about Avocados. The grilling is so easy though, so she gets to set up the TV too along with the Tailgater portable satellite dish from DISH Network. Don’t get all in a tizzy folks, because it self-points and she just screws the coax into the receiver and plugs the cord into the truck electrical adapter. We love the reliability of the signal though as opposed to digital over-the-air which isn’t as strong as analog used to be. Now we can kick back and watch the game outside with grilled guacamole; we’ll be the envy of the parking lot!

  3. Katt the possibilities are really just limited to your imagination. I dip vegetables in it, use it on meats and salads etc. Do a quick search for paleo crackers and you will have tons of results. :)
