Bacon Wrapped Tahini and Sun Dried Tomato Stuffed Chicken Breasts

An amazing yet simple Paleo Stuffed Chicken Breast for a quick weeknight dinner.  So the name of this recipe is a complete mouth full but there was no other way to describe this deliciousness.  It was just a random thought and figured I would give it a shot.  I was pleasantly delighted to taste tahini and sun dried tomato together, it is different but definitely delicious.  I hope you enjoy this simple meal which can be prepped in 5 minutes or less, ready GO.

Serves: 2
Instructions
  1. Preheat your oven to 375 Degrees F
  2. Rinse your chicken breasts under cold water and pat dry with paper towels
  3. Carefully butterfly open your chicken breasts ensuring not to slice all the way through
  4. Season the inside of the breasts with salt and pepper
  5. With as much tahini as you like, spread it all over the inside of the fileted breasts
  6. Next take as many sun-dried tomatoes as you like and sprinkle them all over the inside
  7. Fold the chicken breasts closed back onto itself and wrap two slices of bacon around each chicken breast
  8. Secure the bacon to itself and the chicken with a toothpick
  9. Place the chicken in a pyrex baking dish and bake for 30 Minutes or until your chicken is almost done
  10. Remove your chicken, set your oven to broil on high and then place your chicken on the top shelf of your oven for 5-10 minutes to get your bacon nice and brown
  11. Serve with veggies of your choice and enjoy

  1. This recipe is definitely a keeper. I also stuffed the chicken with a layer of spinach, it was as delicious as it was aesthetically pleasing!

  2. I just made this and wrapped the chicken in prosciutto instead of bacon(I’m on a Whole 30 and didn’t have any compliant bacon on hand, a huge fail on my part!) and it was delicious!!! Thanks for another awesome recipe, George!

  4. This is LITERALLY THE MOST DELICIOUS CHICKEN I have ever tasted. We pan seared each side after baking the chicken. I love this site!

  5. Anything wrapped in bacon is good in my book. This was really tasty. I ended up turning them a few times to broil the bacon on all sides.

  6. Glad I can help, you can also use the tahini to stuff the chicken with spinach and onions and peppers, I was just trying to play with my palate a little bit with this one
