Who’s ready for another recipe round-up? I was so thrilled and grateful to hear that you all loved the first bacon edition we launched on April 1st. Despite the day, it was no joke and your response has really pumped me up to deliver an even better list for your next holiday dinner… Easter! For those of you who don’t celebrate this particular holiday, why not gather your friends and family for a springtime celebration and make these amazing concoctions just for the fun of it? Forget those stale, processed Peeps and sugar-coma-inducing Jelly Belly’s – here’s what I hope to enjoy seconds of this year. A quick and simple side salad to throw together, it packs a punch of flavor and a touch of heat that will have your guests pleading for the recipe. These have to be the most delicious looking carrots I have ever seen in my life. I’m sure the Easter bunny will be hopping to your house the second he spots these on the menu, but you should definitely save them for yourself.. and maybe your guests as well. This dish adds the perfect pop of color to your table. Of course, you can use plain old orange carrots as well, but ombré is the latest trend – or so I’ve been told. Why not give your Easter dinner a little makeover this year?
Before you alert the Paleo police to a second offense, Megan of Detoxinista has provided us with an easy alternative to the peanut butter called for in this popular Easter candy redo (see her final note!). It’s always acceptable to sub in your favorite nut or seed butter on this type of occasion. These peanut butter eggs have the same dreamy, creamy chocolaty goodness of the not-so-real deal without the side order of shame.

Even though I’ve never understood the appeal of Peeps personally, it really doesn’t feel like Easter without these mushy marshmallow chicks hanging around. This homemade honey-sweetened version is something I can actually get on board with and I bet your kids would love to help you make them, too! Just make sure to hit your local specialty store or Amazon ahead of time, because a few ingredients like grass-fed gelatin and quercetin won’t be prominently displayed with the typical holiday foods at your average grocery giant. Consider it a grown-up Easter egg hunt for healthy pantry staples. I promise the extra effort will be worth it.
