Maple Bacon Ice Cream

My awesome farmer gave me some amazing fresh bacon she smoked yesterday, it was the BEST bacon I have ever had.  I decided there was no better way to enjoy it then to take breakfast and throw it in some ice cream, who would complain about ice cream for breakfast.  That lead to this delicious Maple Bacon Ice Cream.  Before I made this one, I left my can of coconut milk in the fridge over night and the ice cream was done in under 10 minutes, it really helped the Ice Cream maker work.  I hope you enjoy :)

Instructions
  1. Lay your 3 slices of bacon on an aluminum foil lined baking sheet and place in the cold oven
  2. Turn your oven to 350 degrees fahrenheit and start the cooking process
  3. Let your bacon cook until it is crispy and you can cut into your own home made bacon bits, mine took about 35 minutes
  4. Once your bacon is done, place your coconut milk, maple syrup, and vanilla extract in a blender and mix well
  5. Take your frozen ice cream maker bowl out and place on your cuisinart ice cream maker and start it, pour your ingredients through the top and let the magic happen
  6. Chop your bacon into tiny bacon bit size pieces
  7. About 5 minutes in when your ice cream starts to solidify, add all your bacon bits and let the magic keep happening.
  8. Once your ice cream is done, transfer to another bowl and let it set in the freezer to your liking
  9. Enjoy

  2. I was planning on making this to go with my paleo apple crumble to take to a friends place for dessert.. Didn’t leave myself enough time but ended up serving my crumble with some Coconut milk, maple syrup, vanilla extract cream? I’m not sure what you would call it, but it was amazing! And went perfectly with the apple crumble, it was also great cause one of my friends can’t have dairy and so she thought it was great too! Thanks

  3. i know this is more a paleo website than a marine website but i just had to write this after reading the paragraph before your recipe. I remember a marine ate some ice cream for breakfast during the last week of boot camp and our senior di lost it on him. he told him some choice words i´d rather not type here, called him a disease, and then made the whole row he was sitting in leave the chow hall. Thank you for the recipe, i will be trying this for breakfast soon.

  6. Ahhhhh…. can't WAIT to make this one! Just bought my ice cream maker tonight and am BUMMED that I can't use it until tomorrow! Going to make blueberry mango first because we happen to have those ingredients on hand! Can you just double the ingredients to double the recipe?
