Macadamia Nut Chocolate Chip Cookies

So now onto this delicious recipe.  I mean right from the start, you could never go wrong with this list of ingredients.  Macadamia nuts and chocolate chips, YES PLEASE.  That is a guilty pleasure of mine.  You can often find me hiding in a corner scarfing down handfuls of Macadamia Nuts and enjoy life chocolate chips.  Oh my mouth is watering just thinking about it, glad I have no chocolate chips in the house and I am going to change the subject now so I don’t drive to the store.  So yes, you should just go ahead and make this recipe before you eat all your ingredients which is apparently something I might have a problem with.


I have to be honest, I am fresh out of anything to talk about, but I really just don’t like blank space.  I think I can get used to it for the rest of this recipe though.  My hopes are that you at least like the photos more than my horrible grammatical errors and spelling mistakes.  I hope you love this recipe and make sure you let me know once you make it.

Macadamia Nut Chocolate Chip Cookies

Serves: 12
  1. Preheat your oven to 325 Degrees Fahrenheit (163 Celsius)
  2. Place your almond flour, sea salt, macadamia nut meal, shredded coconut in a bowl and mix well by hand or using a hand mixer
  3. Add your butter, maple syrup, eggs and vanilla in a separate mixing bowl and mix well
  4. Add your wet ingredients to your dry and using your hand mixer or whisk, mix well until you have a nice dough
  5. Add in your chocolate chips and mix well
  6. Using a cookie scoop or tablespoon, place cookie rounds on your parchment paper lined cookie sheet in the shape you want them to cook
  7. Using a medium cookie scoop I got 12 cookies but you can make them whatever size you would like
  8. Bake for 12-15 minutes for a still chewy but nicely baked cookie (adjust time to your liking)
  9. Remove from the oven and let cool
  10. Enjoy

  2. Same problem here. Batter was runny and couldn’t really form into a shape. Already cooked 15 minutes at 325 and not done, so adding more time and hoping for the best. The batter tasted good though, b/c I had a few licks! :)

    1. Wound up having to cook them for MUCH longer, like 30+ minutes. They still taste absolutely amazing but are flat and chewy, not like the picture where they look thick. I think the recipe short on almond flour or has too much liquid perhaps?

These came out perfect, other than needing to cook longer than recommended.My new favorite paleo treat! Just made these for Valentine’s Day and I’m excited to give them to my Valentines, daughter and husband.

  4. Oh, my! These sound quite delicious by themselves, but would be even more decadent with your new chocolate frosting! Who needs a spoon when you can just dunk them in all that chocolatey goodness?

  5. My dough resembled more of a batter and there was no way I could form a shape with it. It was way too runny. I followed the recipe exactly. I was wondering if the proporation of wet and dry ingredients is off in this recipe. Maybe not enough almond flour or too many eggs? I have a ton of cookie making experience under my belt. I read the line that said to put them on the cookie sheet in the shape you want them to cook and I added more almond flour until the consistency of the dough met this description. I pretty sure I had to add nearly 1/2 to 3/4 cups of almond flour. I also put another 1/4 cup coconut and another 1/4 chocolate chips just to keep the yummy flavor in balance.

    Once I made this adjustment and baked these babies, they were delicious. Always looking for some healthy once in a while indulgences. These will definitely be made again, but with more dry ingredients added to the same amount of wet ingredients in the recipe. I ended up with 2 dozen cookies,

      1. So weird. I had the same problem. Came out very runny like a batter. I used honey and coconut oil, but I’m pretty sure I followed the recipe exactly. I think I need to try again.

  6. I made these today. Awesome! Thank you so much for such a delicious treat. It reminded me of and Almond Joy bar, only inside out, sort of. I also though that adding some orange zest would make a nice variation. Kudos, George!

    1. That was my original plan… to make these taste similar to an Almond Joy, but even better if I could. The orange zest sounds like a great idea, can you let me know how those turn out? :)

      1. Oh, they are definitely better! I was thinking that when I commented, sorry I didn’t include that originally. I misread the recipe as I was making these and had a whole stick of butter going, so, oh, so sad, I had to double the recipe.(I don’t think I did that subconsciously on purpose, but what a great mistake to make! Ha!)
        It may be a while before I try the orange zest, but I will keep you posted. Any idea how long these can keep at room temperature, or should I refrigerate them.

  10. Has anyone run this through a nutrition calculator? I just used SparkPeople’s and it said 234 calories when recipe is divided by 16. That seems high to me. Some of the ingredients were ones other members had entered into the system and you can’t always trust the accuracy of them. I’m not a calorie nazi but was just curious where these stood.

  12. You left out which step to add the melted butter and chocolate chips. Lol. No big deal. I added more almond flour bc the dough was runny. I was at my grandmas or else I would have added a tablespoon or two if coconut flour instead. I also used prcan four instead of macadamia nut flour. I added 2 tablespoons of baking soda. They are in the oven now!

I don’t even tell people they are paleo ;) I’ve also added peanut butter to a batch because my hubby is addicted to peanut butter.   16. Needed a sweet (paleo) treat again, and I was craving these. Alas, I was outta macadamia nuts. I did, however, have pecans, walnuts and cashews. The pecans won… and they taste every bit as good as the macadamia nut version… nom, nom, nom!!!

  17. I made these tonight…noticed the direction didn’t mention the butter or chocolate chips. I just up them in when I would for normal chocolate chip cookies. Also, mine were very runny. It took double the time to cook. They looked nothing like the photo. That being said, they are still awesome!!!!!!!!!!!

  19. Made them!
    Substituted bob’s red mill all purpose gluten free flour, coconut oil, 1/2c honey, pecans, and instead of eggs, we soaked 2tbsp chia seed in a can of coconut milk and used half of that! We’ll save the rest of the chia mixture for, we’ll, whatever comes up! It’s so good by itself!

  20. Making these now, with honey, pecans and coconut oil. Also, we read chia seeds can be a great substitute for eggs so we soaked them in a can of coconut milk. It was a little wet so we added a little more flour( bob’s red mill gluten free all purpose flour)

    We’ll let you know how it turns out!

  25. I made these last night and they were awesome!! My “dough” was a little runny, don’t know why, but I added 1 1/2 tablespoons of coconut flour and then used a smaller cookie scoop. I got two dozen awesome coconutty cookies and I assure you I will be making these again! Thanks, Barb

  27. My cookies are in the oven right now, and they are oozing much liquid after 15 minutes. What have I done wrong? I used exactly what’s written. I didn’t melt the butter, just softened it. Maybe it didn’t get we’ll spread out into batter?

    1. I just made these – without the eggs. I simply forgot to check my storages only to notice in the middle of baking that there was no eggs left… Oops.. I followed the rest of the recipe as it is, and the cookies turned out just fine. They’re still dellllisssshious, slightly crunchy, nicely chewy, and hold perfectly together. The only adjustment I would make, however, would be to slightly decrease the amount of honey and coconut oil (or whichever you prefer to use), specially if making these cookies without the eggs, to balance out the sweetness and make them a bit less heavy. Otherwise, I have to say this is by far the best paleo chocolate chip cookie recipe Ive came across with – thank you George! :) Will make them later with the egg to see if it’ll make a difference to taste and structure.

        1. I made another batch, half the recipe again, so used about 1,5 medium eggs. The cookies are now a lot softer, more moist and milder in taste than the ones without any eggs. Not bad at all, but I think I’d still prefer the crunchiness of the eggless ones (after adjusting the amount of sweetener and oil). They also taste great (and super crunchy) slightly frozen!

  29. Craving something sweet tonight and remembered seeing this recipe this morning. I subbed coconut oil for butter and raw honey for maple syrup because that’s what I had on hand. As they cooled, I was tempted to jump right in, but I let them cool first. These are a hit. I made them a little on the bigger side (too small and I’d be tempted to go back for 2nds or 3rds rather than making them a treat) but I still got 12 cookies. These are absolutely delicious, George! Solid recipe…definitely one I’ll be making again!!! Love it!

      1. Two thumbs up… WAY up!!! I was a little concerned, because the only raw honey I had left in the house was my orange blossom honey (not good for chocolate-based coconut milk ice creams… is does have a distinctive flavor!) Pleasantly surprised, it made no real difference. My mother (a major, major skeptic of most things paleo) liked them too… whoooo hoooo!! These have just the right amount of sweetness. You hit this one right out of the ballpark!!!
