Paleo French Toast

I wasn’t planning on posting this recipe until tomorrow but I felt the urge (demands on Facebook) to type it right now so please forgive the extra amount of spaz in this post.  I know I am all over the place.  Well I am aware that this recipe is not the most original thing in the world, and it takes some prep work in making my banana bread, but I GUARANTEE you that it will be worth every single bite.  I baked two loaves of my bread just so I could have one on hand in the refrigerator for a few days to whip this recipe up.  Between this and my Paleo Pancakes, my breakfasts are set for the rest of my life.

Paleo French Toast

Serves: 6-8
  • 1 loaf of Paleo Banana Bread
  • 4 eggs
  • 1 teaspoon cinnamon
  • pinch of sea salt
  • oil of your choice for your pan, I used bacon grease
  • 1/4 cup almond milk (optional) or you can use coconut milk
  1. The first step to this is to make whatever variation of my Paleo Banana Bread that you desire. This can be done the night before and refrigerated to have french toast throughout the week
  2. Slice your bread into 1/2 inch thick slices and set aside
  3. Preheat a skillet to 350 degrees fahrenheit
  4. In a mixing bowl, beat your eggs, cinnamon, sea salt, and almond or coconut milk if you are using it until well scrambled
  5. Once your skillet is preheated, grease with the oil of your choice
  6. Carefully dredge your slices of banana bread in your egg mixture covering on all sides and place in your skillet
  7. Cook for 3-4 minutes and then flip for another 3-4 minutes on the other side
  8. Remove from the pan and plate
  9. Serve with fresh fruit, some grass-fed butter, or pure maple syrup

  4. I made the banana bread yesterday, and it was fabulous, but today I made the french toast and it changed my life. Okay, that’s an exaggeration, but it was really, really good. And the crazy thing is, I didn’t really care for french toast before I went paleo….. go figure. Thanks for all of your awesome recipes!

  5. I have made this french toast a few times; we LOVE it! Last night I changed it up a bit and had to share. Bacon Stuffed Banana Bread French Toast is our latest treat obsession! I drew inspiration from your chocolate bacon banana sandwiches :) I sliced the bread, spread almond butter on every slice, placed 2 slices of bacon on half the slices, sandwiched everything together, dipped in a mix of egg, almond milk, cinnamon, cooked in bacon fat til golden. I’m certain I don’t have to tell you how amazing this was! Thank you!!

New to the world of the Paleo lifestyle, THANK YOU for your insights and all the hard work you do, not to mention, the oh-so-yummy food ideas.   8. First off, thanks for your most EXCELLENT website and a whole new way of eating. I’m still trying to figure out just what are those inflammation causing foods, and it’s a process of elimination, right? I get a LOT of recipes from Pinterest when I type in grain free in the search and most of the time I get pointed to your site. I have had a lot of success with your recipes and my daughter (14) turns her nose at my “healthy” stuff, but she seems to have no problem eating up everything I make. : )
    Now, for the banana bread…I had every intention of making the french toast, but silly me, I only made one loaf and it was gone before breakfast the next day. We are all about chocolate here, so I make cocoa powder/coconut oil/agave chocolate chips to throw in to the bread. MMMMMMMM!

        1. Sorry… I replied on the French toast page instead of the original banana bread page! I waa the one who asked about an aftertaste because I may have added too much homemade baking powder! See how anxious I am to make sure nothing gets in the way of me eating this bread! :)
