Strawberry Mango Muffins

So this is one of the many muffin recipes I have, you are really only limited to your imagination on these ones.  You can do any flavor, fruit, or nut combinations you want, Your kitchen is your canvas and your palate is judge. Live a little

Ingredients
Instructions
  1. Preheat oven to 400 degrees farenheit
  2. Whisk eggs, melted coconut oil, coconut milk together in a mixing bowl
  3. Sift together the coconut flour, baking powder, and salt
  4. Add the dry ingredients to the wet
  5. I used my food processor to dice the fruit (don't overdue it, you don't want a paste)
  6. Add the fruit to the batter
  7. Spread evenly between 12 muffin tins
  8. Bake for 20-25 minutes or until done
  9. Enjoy

  1. I had a mango about to turn for the worse and strawberries in the fridge so I HAD to make this recipe!

    I did not find them too eggy, however, we have been paleo for two years now and are very used to our muffins containing a lot of eggs due to the absorbency of coconut flour!

    My mango’a ripeness did make for some rather fibrous muffins, but these were a yummy, moist, not too sweet treat :) Perfect for using up random fruit bits!

  2. i tried making these on the weekend and unfortunately they did not work for me :( i thought they were too eggy like a frittata texture but i followed your directions! maybe ill try less egg next time! loving your recipes though
