So this is one of the many muffin recipes I have, you are really only limited to your imagination on these ones.  You can do any flavor, fruit, or nut combinations you want, Your kitchen is your canvas and your palate is judge. Live a little

Ingredients
Instructions
  1. Preheat oven to 400 degrees farenheit
  2. Whisk eggs, melted coconut oil, coconut milk together in a mixing bowl
  3. Sift together the coconut flour, baking powder, and salt
  4. Add the dry ingredients to the wet
  5. I used my food processor to dice the fruit (don’t overdue it, you don’t want a paste)
  6. Add the fruit to the batter
  7. Spread evenly between 12 muffin tins
  8. Bake for 20-25 minutes or until done
  9. Enjoy

  1. i tried making these on the weekend and unfortunately they did not work for me :( i thought they were too eggy like a frittata texture but i followed your directions! maybe ill try less egg next time! loving your recipes though
