Sorry it took a few days for me to get this recipe posted.  When I asked on Facebook which recipe everyone wanted first, the Paleo White Chocolate won by a landslide.  My intention was the post this the next day but life gets in the way sometimes.  We all have our ups and downs, and even though I was never down it doesn’t mean people weren’t trying to drag me there.  Little do they know, I am about as stubborn as they come and I can out will anyone.  Mainly because I just don’t like to give up so I keep fighting with the biggest smile on my face knowing that Sunny Days will come and I will still be there leading by example.  In my short tenure on this earth I have learned that no matter what happens or what people think, if you stay true to your morals and standards, no one can ever bring you down.  Lead by example and eventually everyone will follow.  And my preaching is over, now on to DELICIOUSNESS.

I really made this recipe so everyone could have a delicious dessert to bring to ANY holiday party and have it ready in literally 5 minutes.  You will be shocked at the Paleo or non paleo heads you turn with these ones.  Trust me, I tested these on about 15 people, only 5 of which were Paleo.  The rest just would not stop eating and I knew it was a winner.  Plus they just look sexy and I can tell you that sexy and delicious is the best combination you can have.  Oh crap, I forgot to mention in the first paragraph.  I am humbled to have been nominated for best recipe for Paleo Magazine with my Lemon Cucumber noodles and the best Food centric blog for the year.  I am not going to beg for votes, but if you think I deserve it, I would truly appreciate the vote.  You can vote HERE.

Raw Chocolate Pumpkin Pecan Macaroons

Serves: 12

Instructions
  1. Combine your coconut, pecan flour, cocoa powder, cinnamon and salt in a bowl and mix well
  2. Add in your pumpkin, honey, coconut oil, and vanilla and stir well until all ingredients have been evenly incorporated
  3. Use a medium cookie scoop or tablespoon and scoop rounded balls onto a plate or cookie sheet
  4. Place in the refrigerator for at least an hour to solidify
  5. Store in the freezer or refrigerator and serve cold

I have autoimmune issues and I’m following AIP at the moment, so I can’t have the chocolate nor the nut flour, but I leave out the chocolate and use coconut flour and they are such a great treat.     You can eat several at a time before you know it. Not overly sweet and they are easy to make.

  3. These look awesome and would accommodate most of the diets ( a few vegans, a gluten free, and a diabetic) at my home right now. Any idea how they are on carbs? I’m a temporary diabetic and am in search of a natural low carbs desert (not using artificial sweeteners.)

Just FYI the whole recipe comes out to be 120-124 carbs… any ideas how many servings or individual balls this will make? Also learned a lot about this awesome carb alternative almond flour by researching the ingredients. Will most defiantly have to go buy some of that now. Thanks a bunch!

  5. Holy mother of god, these are FANTASTIC, George! You hit a homerun thinking of this recipe. Just made them and they aren’t even finished yet and already taste amazing. I’ve ate 3 so far :O

  6. Super Easy to make. That much honey seemed to overwhelm them a tad. Perhaps that will lessen as they get colder (used organic raw sourwood honey). Might try Stevia next time, although not sure how much would be equivalent to 1/4 cup honey. Otherwise very tasty and a nice treat.

  10. I understand why most of the macaroons to not make it to the refrigerator. this recipe is delicious, and I made the mistake of trying some of the batter. But having read many glowing reviews before making , had enough sense to double the recipe.

  16. Oh George, you are changing my kitchen one recipe at a time. I made these with the pear butter I just put up in the pantry. Then coated them with white chocolate from last week. Now I just need to find a really good hiding place before the hungry minions descend upon the kitchen and gobble them up. Just to let you know your goodies make being a new type 1 diabetic much easier. Like your “preaching”. keep it up!

  19. Do you think this would work with coconut flour in place of the almond flour? Maybe with half the portion because coconut flour is more absorbent? (I ask only because I have a ton of coconut flour right now…)

  21. These are very easy and really good! I must confess while they are fantastic on their own, I melted some dark chocolate with a little bit of coconut oil and dipped them and then sprinkled them with sea salt and they were delicious. Although much better for you sticking by the original recipe. Thank you so much for all your inspiration and wonderful recipes!

  23. These sound simply amazing. I do not have any pumpkin puree on hand at the moment (confession: we ate it all in a paleo pumpkin custard last night). What other fruit purees might work? I have a banana, some applesauce, and some pear butter (spiced) on hand.
