Pumpkin Cranberry Scones

So first off I have to apologize for not posting as often as I would like but life is just a crazy whirlwind right now and I am doing everything I can to keep you guys stocked with plenty of recipes.  I have a few in the queue to get typed up as well as some pretty good giveaways in line for you.  Thank you to each and everyone for sticking around and showing me the love while I’m busy.  I have my first cross fit competition this saturday since starting to cross fit again so we shall see how bad I get my ass handed to me, but its cool cause it’s all about getting better and Ill bring myself plenty of my own Paleo treats to make me feel better.  Plus I will be with awesome company with all my Homeys from Crossfit Inland Valley so it’s due to be a good time regardless, even in the crappy rain.  Wish me luck.


Alright.  Now on a serious note…………Stacy from the amazing blog Paleo Parents was kind enough to send me a recipe from their upcoming book Eat Like a Dinosaur and if the rest of the recipes are as simple and delicious as this Maple Butternut Squash Puree:

Pumpkin Cranberry Scones

Serves: 12
Ingredients
Instructions
  1. Preheat your oven to 400 degrees fahrenheit
  2. Combine all ingredients in a mixing bowl and knead together with your hands
  3. Press your dough out on a cutting board to about 1/4 inch thickness and form two equal size circles
  4. Cut them like a pizza to the size you want (I got 6 out of each circle)
  5. Put the scones on a parchment lined baking sheet
  6. Sprinkle with a little more pumpkin pie spice or cinnamon (optional)
  7. Put your baking sheet inside a larger baking sheet to prevent the bottoms from cooking too fast
  8. Bake in the oven for 15-18 minutes or until they pass the toothpick test
  9. Remove from oven and set on a cooling rack
  10. Enjoy

  1. Never made scones before. In fact, I am a lousy baker. However the instructions for this are very user friendly. I am nit sure how they are supposed to come out but they were a bit bitter. I had opened a new can of baking powder and it was clumpy. So, I’m blaming the baking powder. Is there a suggested brand of aluminum free baking powder?

  4. Just had to let you know that these are terrific!! Now, my only problem is going to be keeping myself from eating them all at once. LOL!!

  5. SO GOOD! I just spread them on the cookie sheet like cookies since my dough was a bit too sticky and thin. They turned out FANTASTIC!! Will be making them again AND AGAIN!
