So I have been sitting on this Pumpkin Blueberry Blondie recipe for a little over a week, not because I don’t love you but because I took a minor vacation up to Paso Robles for my sisters wedding.  I am still here in my hotel room getting ready to drive home and I decided I missed my website and all of you so I had to type a post.  First thing, it is AMAZING here.  Second thing, I can’t have access to this much wine ever for my own safety.  Third thing, 21 Day Sugar detox will be starting tomorrow so I can whoop my ass back into shape because my girlish figure may have been indulged away.  We all need to live a little sometimes though, so I did, for two haha.  The amount of amazing local food I ate could literally send me into hibernation for a few months happy and full.  There are so many amazing places that I experienced and everyone should check out.  The wedding was at Hammersky, best meals were eaten at Villa Creek and Indigo Moon Cafe, and by far the best wine was had at The Paso Wine Centre.

So that was enough about wine, let’s talk about this recipe.  First off, it was a complete accident when I was in my kitchen cooking for my amazing friends Sean and Suzanne.  Btw, check out Sean’s awesome site The FreeRange Human, he has a ketogenic bacon pizza to die for.  So back to the story, we were making ton’s of amazing food and we were going to whip out of some of my Pumpkin brownies and call it a day until I saw the freeze dried blueberries and wasn’t in a chocolate mood.  That is when the PURPLE BATTER happened and it truly made me happy.  Whether it tasted good or not, it was just fun to play with and make inappropriate smurf jokes about the batter.  I never claimed to be mature, so don’t judge me haha.  So needless to say this ended up being an AMAZING happening and I will be incorporating freeze dried fruit into tons more of my recipes.  But in the meantime, I hope you all enjoy this one and let me know how it is.

Pumpkin Blueberry Blondies with Raspberry Honey Frosting

Ingredients
Blondies
Frosting
Instructions
Blondies
  1. Preheat your oven to 325 Degrees F
  2. Add your coconut cream, eggs, honey, and pumpkin to your stand mixer or a large mixing bowl
  3. Mix all of your wet ingredients until combined (if using a bowl use a hand mixer or whisk)
  4. Add your blueberry powder, cinnamon, pumpkin pie spice, vanilla and baking soda and mix again until well combined
  5. Pour your batter into a greased 13x9 baking dish (grease with coconut oil) or into greased individual mini muffin pans
  6. Place in the oven and bake for 30-35 minutes if in the pyrex dish or 20 minutes in the mini muffin pan or until your brownies pass the toothpick test
  7. Remove from oven, let cool
  8. Cut and Enjoy
Frosting
  1. Put all of your ingredients in a stand mixer
  2. Turn it on high and mix until your frosting has formed stiff peaks
  3. Use and serve at room temperature and ensure your blondies are cool before putting it on or it will melt
Notes
To powder blueberries or raspberries, I took a 1.2 ounce package of each and ran them in my food processor until they were powder

I’m actually a pastry chef, so I’m especially interested in learning all I can regarding gluten-free baking. Does the Raspberry Honey Frosting hold up at room temperature for any amount of time, or should it be strictly refrigerated? I’m hoping to find a filling for paleo whoopie pies. Thanks!

  8. These look awesome! I think I have some freeze dried blueberries & strawberries in my pantry. If I have a jar of coconut butter, too, I’m makin’ these ASAP! Do you order your freeze dried fruits online or somewhere local?

  9. George, what’s the difference of freeze dried and frozen? Do you think frozen be used as a substitute at all? Thanks!

    • Maritza no it can’t. The freeze dried when blended makes a powder which in turn can flavor and color the mix without adding any moisture or changing the baking consistency

  11. I’m thinking, leave out the blueberries and add some cocoa. And for the frosting, remove the raspberries and add some cinnamon. Joila – chocolate pumpkin brownies w/ cinnamon frosting.
