These were a delicious treat shared with me from Laura at Cutting Edge Kettlebells and you can credit the photo to the lovely Jen who made them again and got an awesome shot with her new camera (BTW I recommended it, the same one I have, just saying, haha).  Hope you enjoy.

Serves: 7
  1. Preheat your oven to 400 Degrees F
  2. Mix together your eggs, oil, milk, salt, and vanilla
  3. In a separate bowl, mix together flour, spices, and baking powder
  4. Add your flour mixture to your egg mixture and mix until there are no lumps left
  5. Fold in your vegetables and pepperoni
  6. Pour into 7 lined cupcake pan and bake for 15 minutes
  7. Enjoy

  1. Do these call for dry sun-dried tomatoes or the kind packed in oil?

  2. These are all kinds of delicious!

  3. I’ve made these several times now. Delicious and easy!

  4. Is there any way to substitute the almond flour? My son has anaphylaxis allergies to peanuts and tree nuts. TIA :-)

  5. Because they taste good. Feel free to omit, completely up to you, I am sure they will taste just as good

  6. Why is there vanilla in a savory recipe? Just curious…otherwise sounds like a good combination.
