So before all the haters come crawling out because this is titled white chocolate, I am very aware that white chocolate actually has no chocolate in it. And just for you special people, you will see in my photo, I included some chocolate so my title still applies. Honestly, if you want chocolate though, just add some cocoa powder to this one and voila. I finally got some raw cacao butter to start playing with and I don’t know how I ever lived without this stuff. Before I continue, MAKE SURE YOU BUY THE FOOD GRADE CACAO BUTTER. Now you can not get mad at me if you use palmer’s cacao butter and don’t get an edible product. So yes, this was my first expirement with it and I have been working on an amazingly smooth chocolate macadamia nut butter that reminds me of velvet. I know that may be a horrible adjective but it is early in the morning, and the first thought that popped in my head.
Speaking of adjectives, I do not know what possessed me to go back to school, but I am both enjoying it and hating it. Like I didn’t already have enough on my plate, I stacked it higher with more to do everyday. But I have to say it is fun, especially because it is all online. It just wasn’t fun this week when the discussion forum post had to be on health and wellness and I had to talk about how eating whole grains and carbohydrates would improve my health. Can you sense the enthusiasm in my voice? So in case you don’t know me that well, you will know I did not write about that. Instead, I took the 200 word minimum requirement and blasted my response to just over 1000 words with reasons why I should not eat whole grains or carbs to feel better. Oops. We shall see how my instructor responds to that one, here is hoping she likes Paleo. But I have to pat myself on the back, I was very respectful and politically correct.
Oh yeah, one more thing. I know the holidays and thanksgiving is right around the corner and we all want recipes. I was going to do a dedicated post just to all my recipes that are pumpkin themed and perfect, but I realized that would kind of be redundant. Last year I made a Paleo Thanksgiving Ebook and if you are still interested, and have not received it as a bonus for buying my cookbook, you can grab it HERE. I also finally got the search bar on my site where it is useful, so if you type pumpkin in the top right you will be overloaded with Pumpkiny Goodness. - Melt your raw cocoa butter in a glass bowl over a double boiler on your stove set to low (raw cocoa melts at 93 degrees, don’t burn it)
- Once melted, transfer to another bowl and add the remaining ingredients
- Whisk well ensuring there are no lumps left and everything is incorporated
- Transfer to a blender or a food processor and run it to get it as smooth as possible
- Pour into your chocolate molds or silicon cups and place in the freezer for at least an hour
- Remove and serve or chop them up and add them to chocolate chip cookies or muffins
