Macadamia Nut Apple Cookies

Ok I have two important things to cover before the recipe.  First, this recipe tastes amazing because of the amazing Macadamia nuts I get right up the street from my awesome friend Rina at Cali Mac Nut Company.  She provided me with these delicious nuts plus gave me the recipe that I just made a few minor adjustments too.  So everyone head over to her Facebook Page and say thank you.  Second, I have not tried this recipe with any nut butter besides Macadamia.  I have no idea if it will work with almond, coconut, sunflower seed or any other butter you can make.  It might but I am not sure.  Actually, let’s make this easy.  If anyone makes it with anything besides macadamia nut butter and you email me the recipe mods to use here, I will send you a $25 Tropical Traditions Gift Card.  Email it to me at hi@civilizedcavemancooking.com with the Subject Line of Macadamia Nut Apple Cookies.  I will only be able to give gift cards to the first person whose recipe works in each of the other different nut butters.  One for almond butter, one for coconut butter, one for pecan butter, etc.

If you couldn’t tell, I tried to get all cutesy with the photos.  I don’t know if I succeeded because I didn’t really have a stand out favorite.  They aren’t the worst photos I have ever taken but I was having a creativity block when it came to styling.  I hope they look good enough to get your mouth watering.  Just so you know, the gorgeous drops of sweetness on the below photo is some honey I drizzled on the cookies.  You don’t need it but I was in a sweet moment.

So I won’t keep you much longer, but I have to just remind everyone that PaleoFX is coming up and if you are going, I can not wait to meet you.  I love Austin and had a great time last year.  I want to meet so many more faces this year, just don’t come to my cooking demo since I don’t know what I am doing haha.  Just kidding but if you are going, please come find me so I can give you a hug and say thank you.

  1. Hi there, thank you for this great recipe. Would it come out as well if I used maple syrup instead of honey?

  2. Been craving a cookie, glad I found this gem! Since the processer was used so much and my critic advised me my apple slices were to big… I got carried away and pulsed a little too much. Didn’t add anymore dry ingredients and it still was a success! “Fool proof” in my book, I’ll give a link on my site. Thanks a lot.

  3. Hi! I’m wondering if I could take out the apples? Do i need to replace them with anything else? I’m worried that it won’t keep as long if I added a fresh apple.

  4. I have a dumb question, what’s the difference with the mac nut and mac nut butter?

Please continue to keep up the GREAT work.

IT’S SHAMEFUL HOW TASTY AND DELICIOUS THESE ARE!!! MAKING MORE THIS WEEKEND FOR MY SON. These cookies make me overeat them b/c they are so good!!! Thank you for the recipes. Your awesome!!

  7. My kids and I liked this cookies a lot. It can be hard to find raw macadamia nuts but I order them from a internetshop. (Sweden)

  8. I made this recipe with hazelnuts and they are sooo good! I was a little surprised by the stickiness of the dough it was really hard to get it out of the bowl and onto the pan but a little greasing with some butter helped. Thanks for another great recipe. I am going to make these for Passover next week.

  9. These look amazing, can’t wait to try them after I’m done doing the zero to very low sugar thing. Oh and I nominated you on the Saveur’s Best Food Blog Awards. You are awesome George!

  10. I can’t get raw mac nuts in my area. How about roasted/salted ones instead??

I just made these cookies and have eaten 4 still warm :) They are very very good! I diced the apple up very small and cannot taste it (not a warm fruit kind of person.) I followed the recipe exactly but mine came out not flat at all like the pictures. I cooked a few extra minutes bc of this. Hopefully there will still be some left when my husband gets home :)

  12. Can you use almond flour or regular honey?

  13. I have really been on a macadamia nut eating craze lately so this post is incredibly well timed for me. Also I love the little chalk board in the back saying mac nut apple cookies and the cute smiley face. LOVE!

  14. George these look delicious! Thanks for sharing.

  15. Looks great! I love macadamia nuts – nice change from so much almond flour in grain-free recipes.
