So you aren’t going to get your typical Sunday morning, almond milk latte hyped up blog post this morning. Instead I am going to spare you the long read and let you get straight to this deliciousness that has been requested. I will however give you a short summary of my day because I just wouldn’t feel right not talking for a minute. Snapshot, ready GO. Drank too much wine last night, slept like shit, went to the coffee shop this morning, didn’t feel like blogging, only had one latte, came home, and some bacon, went Merry Maid on my house for 3 hours, ate some more bacon with eggs this time, continued to scrub toilets and wash floors and do laundry, ate the last of the bacon, finished cleaning and felt better. Now I am writing this to you while I have some contraption in the oven that hopefully turns out well and that will be up for a vote soon ;). If its good, I plan on eating way more than I should, sitting on my couch, and doing nothing until bed time to wake up at that lovely hour of 0430 tomorrow to start my week. That’s all.
Now that I blabbed, lets just get to the bottom of this recipe, none of the credit for this goes to me. My bestie Tara over at The Foodie and the Family is the creator of this amazingness. All I did was cut it in half and make tiny ones cause I wanted to eat them all week, cause I am greedy like that. You can see the original recipe HERE. German Apple Pancake

Serves: 8
Ingredients
- 6 eggs
- 1 cup almond milk
- 3 tbsp coconut oil, melted
- 2 tsp vanilla
- 2 tsp pure maple syrup
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- 1/8 tsp nutmeg
- 2 apples, cored and diced
- 2 tbsp coconut oil
- 2 tbsp raw organic honey
- 1 tsp cinnamon
- 1 tsp nutmeg
- juice of 1/2 lemon
- handful of crushed pecans
Instructions
- Preheat Oven to 425 degrees fahrenheit
- In a large bowl, whisk eggs, almond milk, coconut oil, vanilla, and maple syrup
- In a small bowl, stir coconut flour, nutmeg, and baking soda
- Mix dry ingredients into wet ingredients and beat well to combine, set aside while you prepare the apples
- In a small frying pan, heat 2 tbsp coconut oil and raw organic honey
- Stir in cinnamon and nutmeg and juice of 1/2 Lemon and cook for 1 minute
- Add in your apples and sauté until all your apples are nicely coated
- Evenly divide your apple mixture between 8 ramekins greased with coconut oil and then evenly divide your egg mixture on top of the apples between the 8 Ramekins
- Place your Ramekins on a baking sheet and bake for 20 minutes at 425 and then reduce heat to 375 and cook for an additional 20 minutes
- Sprinkle with pecans when removed from the oven
- Enjoy

I doubled the coconut flower since I know these muffins can be really “eggy”. This added a little bit of a coconut flavor and didn’t end up looking like the picture, but if you don’t care about either of those things (like me), they’re FANTASTIC! My whippersnapper liked them, so they’re also cave-kid friendly. :D

I just made this and it is delicious…..trying paleo and was glad a breakfast dish using fruit will bring variety to morning meals . I used all honey in mine instead of maple and it was wonderful…. Reminds me of bread pudding too….I may eat some cold tomorrow it would be like dessert! Also I used a 9×9 ” glass dish ( adjusted the temp) and it came out perfect….Thanks for down sizing it (just me & hubby). Sure is Yummy!

These were amazing!!! Followed recipe as above and they turned out fantastic! I’m a nursing new mom , and so I always feel like I’m starving; I eat paleo 100%, but I have a lot more treats (not cheats!) than I probably should. They are egg based so I don’t know how well they will defrost. But people do it will waffles and egg base pancakes so give it a try
I just made these in muffin tins. First paleo baking adventure! What would happen if you mixed a lil of the stuff you sautee the apples in with the egg mixture? would it fail to rise? cuz i think that might be really tasty!

Just made these tonight. This was more a souffle ( a good souffle) I think if you doubled up on the flour and used a 1/2 cup plus some it may rectify the problem that some people are having.

Just made these today but used the original recipe you mentioned (thanks for the link!). Didn’t want to go for sweet (pear) on sweet (apple) so I sub’d rhubarb for the pear – the tart and sweet worked great with the maple syrup. I just made this! I loved it and I discovered how cute cooking in Ramekins can be! ;) My friend and husband enjoyed them too…I think it has too much egg though…I think I will sub an egg or two for banana next time or just use 6ish egg whites with 3 eggs or something to reduce the taste of egg. They do give it a nice texture though. But seriously it is wonderful and didn’t cause any blood sugar issues here – LOVE. :D

Hi, i just made these. I didn’t know what to expect taste-wise, but when I took the first bite I realised they tasted like what we in Sweden call “ugnspannkaka” (oven pancake). It’s traditionally made with eggs, flour and milk, baked in a roasting pan and served with apples, bacon and lingonberry jam. It’s always been a childrens favourite, so this brought me some sweet childhood memories, thanks :)

I made this yesterday following your recipe exactly. Mine came out dense and overcooked. How did you get yours to have what appears to be a fluffy,puffed appearance. Also, what kind of apples did you use? I went with granny smith, using 2 large, my diced apples did not rise to the top… What size ramekins did you use?
I need suggestions. For my 8 & 9 year olds, how the food looks is a big an issue as the texture and taste.
I used red apples, I don’t remember what kind they are. The fluffy puffed appearance is from the eggs and the ramekins I used are id say about 3-4 inches across so not that large. If you redo them cut the cooking time down by a bunch and then just monitor them. I wish I could help more but I am not a cook by science, I do it by feel and write the best directions I can.

These are leavened with baking soda, which does expire. If its old it may not give as much lift as you want. Resulting in flat pancakes. Check the package for the expiration date. And while your at it check to make sure that your baking soda does not have cornstarch in it, some companies add it.
Thanks for the heads up on that. I recently discovered my “ground cinnamon” contained soy and other random bs, not just plain old ground cinnamon.

So I’ve attempted these twice now and both times they’ve been a little off. No amount of greasing the ramekins has been able to get these things out clean enough to serve as pretty as your photo. But beyond prettiness, I feel like something is up with the texture of mine. I’m wondering how they are supposed to turn out because both times I’ve made these they’ve come out with a custard-y flavor and texture. Not much of a “pancake” image coming to mind, but then again I’m not sure how they are supposed to end up. The flavor has always been good and the apples are delicious. Just wondering if I’m doing something wrong or if that’s how they’re supposed to turn out.
I don’t think your doing anything wrong. Recipes are funny when remade but mine are like spongy when they come out. The name was just because I modified someone else’s recipe and kept the name. In my opinion, if they taste good then we are good

I did the same as Tracy did – baked these in a muffin tin. The flavors turned out really well but they did stick quite a bit, even with plenty of greasing. How do they keep from sticking in ramekins? Also, I wasn’t sure about how long to saute the apples for. . .

I am sorry Tracy, ramekins are super convenient and really cheap. If you get them you can use them to make egg muffins for the week or mini desserts etc. Hope you make this again :)
Well I tried them in a muffin tin because I do not have Ramekins and I would advise against doing this! I used paper cups because I was worried about sticking. The muffin cups were much smaller than a ramekin and so there was way too much apple (I ended up almost completely filling 10 muffin cups) and there was way too much egg mixture (I still had almost a full cup of batter left after filling the 10 muffin cups. I wasn't sure how long to cook them for because they are smaller. The kids say they taste really good though. Next time I will go buy Ramekins and make them the right way though.

I just spent at least 1.5 hours googling baby dutch pancakes that are ok with paleo or the specific carbohydrate diet. I gave up because I didn't have the ingredients. Then I thought I'd check out your page and whad'ya know you have the the best recipe out there. They are in the oven right now. Just wanted to say thanks and I LOVE your page. @Torrey if you don't want all the stuff that comes in the milks Amazon carries nut milk makers. They aren't that expensive and are really easy to use. I know you make your own almond milk, but for those of us not savvy enough (and sans food processors), is there one on the market without any crap in it? All the brands I've seen have a lot of icky additives. :(
Or would coconut milk (from a can) work instead?

I am going to have to try this in the next few weeks when I add coconut flour back into my diet! Keeping it simple right now for a few reasons! The name made me laugh since it looks more like a cinnamon roll to me but wow it looks great!

I just used Tara's recipe for a savory bacon-squash version. Mine didn't turn out nearly as pretty as hers or yours but it sure was tasty! I really like your individual servings and am going to try that the next time. Perhaps it will be picture worthy then.
