Coconut Cake(Bread) with Chocolate Frosting

Cook Time: 40 Minutes

Process(Cake):

  1. Preheat your oven to 350 Degrees F
  2. Mix together eggs, oil, honey, and salt (make sure you melt the coconut oil first)
  3. Combine the coconut flour and baking powder and continually whisk into the batter until there are no lumps
  4. Pour into a greased 9x5x3 or smaller loaf pan and bake for 40 minutes
  5. Remove from pan and cool on rack
  6. You can top it with the chocolate frosting recipe below or cut the bread in half like I did and layer it with the chocolate frosting and then put back together
  7. Enjoy

Process (Frosting):
  1. In a small sauce pan over low heat, melt the chocolate chips and the coconut oil together
  2. Once melted, add in the honey, vanilla, and sea salt and continue to stir until mixed well
  3. Remove from the heat and place in the freezer for 15 minutes to cool
  4. Remove from the freezer and whisk until you get the consistency you want
  5. Use on cookies, muffins, cakes, or this blueberry bread.  Just make sure you only use it on Paleo Food :)
