Tools you may Need:
Ingredients(Cake):
- 6 Eggs
- 3/4 Cup coconut flour
- 1/2 Cup coconut oil
- 1 Cup dried blueberries
- 2 Tbsp raw organic honey
- 1/2 Tsp sea salt
- 1 Tsp baking powder
Process(Cake):
- Preheat your oven to 350 Degrees F
- Mix together eggs, oil, honey, and salt (make sure you melt the coconut oil first)
- Combine the coconut flour and baking powder and continually whisk into the batter until there are no lumps
- Pour into a greased 9x5x3 or smaller loaf pan and bake for 40 minutes
- Remove from pan and cool on rack
- You can top it with the chocolate frosting recipe below or cut the bread in half like I did and layer it with the chocolate frosting and then put back together
- Enjoy
Ingredients (Frosting):
- 1 Cup Enjoy Life chocolate chips
- 1/2 Cup coconut oil melted
- 2 Tbsp raw organic honey
- 1 Tbsp Vanilla
- Pinch of Sea Salt
Process (Frosting):
- In a small sauce pan over low heat, melt the chocolate chips and the coconut oil together
- Once melted, add in the honey, vanilla, and sea salt and continue to stir until mixed well
- Remove from the heat and place in the freezer for 15 minutes to cool
- Remove from the freezer and whisk until you get the consistency you want
- Use on cookies, muffins, cakes, or this blueberry bread. Just make sure you only use it on Paleo Food
