This recipe comes from my awesome friend Esther over at Paleo on Main Street and her recipe can be found here. I only changed a couple little things and this thing is AMAZING. Her original recipe is too but I wanted some sweetness and decided to incorporate that two ways, I added cinnamon infused honey and instead of using the walnuts I candied them in maple syrup and then added them. Hope you enjoy.
- 3 mashed bananas, spotted
- 1 cup almond flour
- 1/4 cup coconut flour
- 3 eggs
- 1 tsp vanilla
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp cinnamon
- 1/8 cup 100% pure maple syrup
- 1/2 cup walnuts, chopped
- 1 banana
- 1 tbsp cinnamon
- 1 tbsp cinnamon honey (If you don’t have this, use organic raw honey and then have a total of 2 tbsp cinnamon in the swirl)
- Preheat your oven to 350 degrees fahrenheit
- In a mixing bowl combine the first 8 ingredients of the cake and using your hand mixer combine all ingredients well, set aside
- In a separate mixing bowl, combine all your swirl ingredients and mix well by hand
- Grease your 8×8 pyrex baking dish with oil of your choice, I used coconut oil
- Fold in your cake batter and spread evenly
- Now drop spoonfuls of your swirl mixture all over your batter and then using a knife cut in the swirl however your little heart desires
- Place your cake in the oven and start the baking process, should bake for a total of about 30 minutes or until a toothpick comes out clean
- As soon as you put your cake in the oven, make the candied walnuts
- As soon as they are done and cool, you should have about 15 minutes of baking time left, pull your cake out and sprinkle your walnuts all over your cake and place back in the oven
- Finish your baking time, remove from the oven and let cool
- Slice and enjoy

I made this last night but instead of the walnuts i sprinkled some dark chocolate chips on top. It was amazing!! love this. I think i’ll make it for xmas dinner!!

I was curious about the cinnamon honey..is that 2 Tbsp for every 1 Tbsp of honey?
Sorry I see how confusing that is, just do 1 tablespoon of cinnamon to the honey
Loved this! Didn’t candy the walnuts though and just mixed them throughout the dough. Definitely more cake texture than regular banana bread but it’s awesome.

This may be the best dessert yet. I loved the pumpkin brownies, but I think this is my favorite. I can’t believe how good the Caveman candied walnuts are. It’s as good as any banana nut bread I’ve ever had.

can you sub the almond flour with another gluten free flour? i have an almond allergy.
Your other option would be coconut flour and that is not a 1 to 1 swap. You might have to do some google research to figure out the best starting point and experimenting. Hope it works
