Carrot Cake Caveman Cookies

Nothing like a simple, savory cookie that is good for you and tastes delicious.  This was one of the first Paleo treats that I ever made and it is perfect for snacks during the day, or a cookie to have after dinner, or even a sneaky way to get your kids to eat some vegetables.  I did not come up with this recipe, I was given 90% of it and I changed it a little but I don’t know where it came from.  You can liven it up all you want and play with the flavors, maybe add some cinnamon or cloves.  I might alter it up a bit on the next remake.  Enjoy

Ingredients
Instructions
  1. Preheat your oven to 350 Degrees F
  2. Combine all of your ingredients EXCEPT your eggs in a food processor, pulse it until all the pieces are small but still a little chunky
  3. Combine that mixture with the eggs in a large mixing bowl and mix well
  4. Using your hands, form the mixture into "patties" and place on a parchment paper lined cookie sheet. The size of the "patties" are up to you, or you could make the into bars
  5. Bake until done, around 35-40 Minutes
  6. Enjoy
