Blueberry Coconut Chocolate Chip Scones

So as I continue to go through my recipes and repost to my blog I am starting to sense that going Paleo has converted me into a Baker and I am ok with that because these creations are amazing.  Enjoy.

Blueberry Coconut Chocolate Chip Scones

Ingredients

Instructions
  1. Preheat oven to 375 degrees
  2. In a large bowl, combine almond flour, sea salt, baking soda, blueberries, chocolate chips, and coconut
  3. In a smaller bowl, mix the egg and pure maple syrup until well blended
  4. Add the wet ingredients to the dry and mix well
  5. Knead the dough with your hands if necessary to ensure an even distribution of ingredients
  6. Form dough into 2 circles approximately 1/2 inch thick
  7. Cut each circle like a pizza into 6 or 8 slices depending on the size you want your scones
  8. Transfer to a parchment lined baking sheet
  9. Bake for 10 minutes or until golden brown and cooked through
  10. Enjoy

  1. I tried making these the other day and was totally frustrated! It seemed like the ratio of dry to wet ingredients was nowhere near where it needed to be. After mixing the wet into the dry, it was a bowl full of dry ingredients. I desprately added coconut oil, but it didn’t do much. I had to add tablespoon by tablespoon of water as a desperate attempt to transform it into a dough-like texture. Eventually I had a pathetic display of dough and baked it. It just seemed like it wasn’t even remotely close to enough wet to dry. Am I missing something? (I don’t have a food processor. I was doing it by hand.) Thanks!

  2. I finally made these, and I love them!! I didn’t have dried blueberries, but they still turned out great! I LOVE scones, so it’s nice to have a healthy alternative. They’ve been great for my morning sickness too as food isn’t that all appealing to me lately. Thank you for all of your wonderful recipes!

  3. I made these last night with blackberries instead of blueberries and 1 tablespoon of honey and one of xylitol instead of syrup and they were absolutely delicious!! Love the website George, keep up the wonderful work! :)

  5. I made these with dried cranberries and no chocolate chips bc my daughter recently revolted when I put choc chips in some paleo almond banana muffins. They were delicious!

  6. While craving bacon this morning, I came to your site for bacon recipes…I found this scone recipe and tweaked it by omiting blueberries and coconut, adding bacon, mashed banana, peanut butter and macadamia (why not!) And boy am I in a happy place right now! Thank you for your inspiration!

  7. I am drooling a little bit….also i am hesitant about the syrup/honey. I try to stay as clean/paleo as I can w/out spiking my blood sugar. I am currently grain/gluten free and as little sugar as I can possibly manage…could I use erythritol (or Swerve) to sweeten them naturally w/out the added sugars of syrup?

    I’m also fairly new to the paleo “rules”….it just happens to be how i eat by accident. I didn’t know there were actual rules :)

    • Thank you for the kind words Heather. I am unfamiliar with those ingredients as the only sweeteners I use are honey, maple syrup, or sometimes coconut sugar. It may work but you will have to experiment

      Heather, my husband is a diabetic and when his diet is good, and I have Paleo treats onhand, such as Paleo brownies, pancakes, etc., local pure honey and pure maple syrup does not spike his blood sugar. Just an FHI. Has to be pure though and local if possible.

  10. I’m severe coconut allergic. Do you think these would come out okay if I omitted that ingredient? Or is there something I can sub for it?

  15. Wow this recipe is amazing. I made a batch with maple syrup as suggested and they were great, but i prefer raw honey as a sweetener so i made another batch with honey instead and they were just as good. Thanks for the great website!
