These are by far the best Paleo brownies that I have made or had.  A lot of my baked goods are delicious but these are just straight up amazing and the possibilities are endless for adding fruits or nuts or some Enjoy Life Chocolate Chips.  I hope you enjoy this absolutely amazing treat and make sure you share :). If you do not have Coconut Cream Concentrate, if you have patience and a really good blender or food processor, you can make it yourself.  Thanks to my awesome fan Krystal Caddow-Levine for posting her success with this.  She found the instructions here.

Serves: 20

Ingredients

Instructions
  1. Preheat your oven to 325 degrees fahrenheit
  2. Place all of your ingredients together in a mixing bowl except your apricots
  3. Use your hand mixer and form your batter
  4. Once mixed well, fold in your apricots by hand and ensure an even distribution
  5. Pour your batter into a greased 8×8 baking dish (grease with coconut oil)
  6. Place in the oven and bake for 30-35 minutes or until your brownies pass the toothpick test
  7. Remove from oven, let cool
  8. Cut and Enjoy

  12. This recipe is money…instead of apricots i used the maple bacon from the brownie bacon bites recipe and added a couple scoops of protein powder to fit my macro needs. Love how a lot of your recipes are a great base to get inventive with other stuff in the kitchen.

    Wow, delicious! I made them with peaches – I think I will skip the fruit and go a little easier on the honey for a truly scrumptious dessert. They are soooooo good after being in the fridge overnight. Hands-down the best and fudgiest brownies EVER. Even grain-eaters would love this.

  25. In this recipe nothing, you can go make my Blueberry banana brownies and replace the blueberries with apricots if you want. That one uses almond butter
