Jalapeño Dijon Grilled Chicken

Phew so what a busy few weeks it has been and I just want to say sorry for the lack of recipes up here lately. Between work, required classes that require 4-5 hours of homework a night, setting up giveaways to give you all awesome prizes, training, and competing on top of having my identity stolen, it has been HELL to say the least. So THANK YOU ALL so much for participating in my giveaway, we had a huge response and if you all keep participating like that it will be really easy for me to keep giving away some awesome prizes. Jalapenodijonchicken 1024x720 Jalapeño Dijon Grilled Chicken

Servings: 4-6

Prep Time: 10 Minutes

Cook Time: 15-20 Minutes

Ingredients:

  • 3 Lbs Chicken Thighs, skin optional
  • 4 Jalapenos, diced (I kept my seeds in)
  • 2 Garlic Cloves, pressed
  • 2 Tbsp Kasandrios Olive Oil
  • 4 Tbsp Dijon Mustard
  • 2 Tbsp Raw Organic Honey (optional if Whole 30)
  • 2 Tsp Salt
  • 1 Tbsp Fresh Rosemary, chopped
  • 1 Tsp Pepper
  • 1 Lemon

Process:

  1. Combine all of your ingredients, EXCEPT YOUR LEMON, in a bowl or dish to marinade your chicken
  2. Marinade for at least a few hours but 24 hours in the refrigerator is ideal
  3. Once your ready to cook, preheat your grill to a medium/medium high heat or about 400-450 degrees F
  4. Once your grill is ready, place your chicken thighs on the grill and cook between 7-10 minutes per side
  5. Use a meat thermometer to ensure your chicken is cooked and at least 175 Degrees F
  6. Once done place all your chicken thighs in aluminum foil, squeeze all your lemon juice over the chicken, and close the aluminum foil and let it steam with the lemon juice for about 10-15 minutes
  7. Serve and enjoy

  3. OH MY GOODNESS!!! Very delicious!! Me and the husband couldn’t stop talking about how good they were. Used all ingredients except the lemon at the end. Only because I did not do any chopping. I just threw it all in the food processor and made it until a pesto sauce. Then let the thighs marinade with the sauce for a few hours. Very delicious!! I think the next time I’m going to save some of the sauce and use it as dipping sauce. Great flavors and the right amount of hotness. I definitely will be making this really really soon. Thanks!!!

  4. So quick question… recipe sounds awesome but I don’t have a grill. If I wanted to do this in the oven – what temp and time would you suggest?

  7. I’m a savory girl so mustard and jalapenos are at the top of my freaking list. This recipe was killer. Even though I only had breasts, even though I had to bake it, even though I only marinated for 90 minutes… It. Was. The. Best. Ever.

    This was pretty awesome. I did it in the oven so the time was different and I bought a whole chicken and quartered it. Well the butcher did :) but it was really good and I will try it again with different cuts of chicken.

    This was AMAZING! I’ve made it twice.. both times I kept the seeds in and instead of dicing, I put it in a food processor which I think helps blend everything better and have it soak in the chicken better. I also used chicken tenders and put them on a skewer to BBQ… SO FLIPPING GOOD! Oh, and it’s amazing without the honey :) Will definitely make again.. some people didn’t believe I made it and thought I bought it at a store :)

  16. Tried this one out today…had to use a grill pan and high heat instead of the grill because its still winter in Michigan. But the marinade was awesome and really made for some of the best chicken i have BBQ’d in a while…another winner. I paired it with the broccoli and sesame dressing.

  18. I just made this tonight – and let me say, insanely good, crazy good, big thumbs up. I couldn’t grill outside, so I set up the grill pan with coconut oi on medium high, followed the recipe and at the end let the chicken simmer with the heat off with the lemon juice, (foil covering), for the last ten minutes. Frickin awesome!!!
