These are the juciest and best pork chops I have ever had or made.  How many of you grew up eating pork chops and just accepted they were always dry?  I did, but screw that grocery store pork, nothing like what I got from my farmer and will never buy meat from a store again if I can avoid it.  Well back to this recipe, all the flavor combinations in this just explode in your mouth and it is amazing.  Enjoy

Serves: 2

Ingredients
  • 2 bone in pork chops
  • 1 cup unsweetened applesauce
  • 1/3 cup dried cranberries (dried with apple juice)
  • 1/4 cup fresh lemon juice
  • 1 tbsp dried rosemary, chopped
  • 2 cloves garlic, minced
  • 1 small apple, sliced
  • 1 small onion, sliced
  • salt and pepper to taste
  • ginger to taste

Instructions
  1. Preheat your oven to 300 degrees fahrenheit
  2. Preheat a saute pan on your stove top over medium high heat
  3. In a mixing bowl, combine your applesauce, cranberries, lemon juice, and rosemary and mix well
  4. Season both sides of your pork chops with salt, pepper, and ground ginger to your liking
  5. Once seasoned, sear your pork chops for 2-3 mins of each side then set aside
  6. Line the bottom of your baking dish with your sliced onions
  7. Place your pork chops on the bed of onions
  8. Rub your garlic onto the top of your pork chops
  9. Place your sliced apples in a single layer on top of your pork chops
  10. Now evenly spoon your applesauce mixture over the top of your porkchops and cover the entire chops
  11. Cover with aluminum foil and bake for anywhere from 30-60 minutes depending on the thickness of your chop
  12. Once the internal temperature reaches a minimum of 145 degrees you are good to remove them from the oven and let them rest for 10 minutes before serving
  13. Enjoy

  3. We love this dish! The pork always ends up so tender. The cranberries add a nice pop of flavor. I always serve it with a side of veggies.

    This was soooooo good, I know it's pork but it reminded me of thanksgiving…weird? ;). Instead of baking them I put them in the crackpot for 6 hours. Will definitely make again and again.
