Beef Noodle Soup with Shitake Mushrooms and Baby Bok Choy

Hey everyone.  I am so excited to bring you all this amazing Guest post, but before I do I have some BIG news.  I finally started my Youtube Channel and I started with a video to just say thank you to all of you.  Every reader, every visitor, every family member and every friend who have supported me up until this point and will continue to do so going forward.  This is an amazing recipe and I am happy with my first video so watch below and then get to cooking :)

Today, we have a warm and comforting beef and zucchini noodle soup, spruced up with baby bok choy, shitake mushrooms, garlic and crushed red pepper flakes. Serves: 1
Ingredients
  • 1/2 large zucchini, peeled, spiralized
  • 2 tsp minced garlic
  • 3 oz NY strip steak, cut into 1" cubes
  • 1/4 tsp crushed red pepper flakes
  • 1.5 tbsp olive oil
  • 1/4 cup of water
  • 1 cups chicken broth, homemade
  • 1 tbsp coconut aminos
  • 1 head of baby bok choy, roughly chopped (about 3" pieces)
  • 1/2 cup shitake mushrooms (about 6 mushrooms)
  • 1/4 heaping cup chopped green onions
  • salt and pepper, to taste
Instructions
  1. Season the beef cubes with salt, pepper and lightly pat with olive oil.
  2. Place a large saucepan over medium heat and add in 1 tbsp of the olive oil.
  3. Once the oil heats, add in the garlic.
  4. Once the garlic heats, add in the beef and cook for about 1-2 minutes per side or until it is still rare in the middle but seared on the outsides.
  5. Remove from the saucepan, leaving in the garlic, and set aside.
  6. Place the rest of the olive oil in the same saucepan and add in the red pepper flakes, bok choy and mushrooms. Stir to combine and cook for about 2 minutes.
  7. Add in the water and chicken broth and bring to a boil.
  8. Once boiled, add in the coconut aminos. Reduce heat and simmer for 5 minutes.
  9. Add in the beef, zucchini noodles, and half of the green onions. Cook for 2 minutes and then pour into a bowl.
  10. Top with remaining green onions and enjoy!

  3. I made this for dinner last night and it was AWESOME! I had to use regular-sized bok choy because apparently people stock up on baby bok choy before blizzards. I used a julienne peeler to make the zoodles and I didn’t bother peeling the zucchini first. Excellent recipe; thanks for sharing!

    I saw this recipe and knew I had to try it. I was craving soup even though it’s in the 80′s here in Florida – haha! I bought a spiralizer 6 months ago and it’s been neglected on top my fridge so I was happy to use it! I forgot how much I love making noodles with that thing and really need to remember to use it more! I added some of my favorite spices and tossing the meat in some coconut flour, cooking it in the same pot as the soup but other than that I followed the recipe. I loved it!! Great leftovers too! And, I love your site. I’ve been following for a while now and have tried many of your recipes – they’ve all been great! Keep up the great work hun! :)

  6. I have the spiralizer!! I bought it for myself and ended up using it daily because suddenly the kids are suddenly into vegetables! I make this naughty treat for them (not more than once a month and I hope I don’t get banned for saying it) but I deep fry spiralized potatoes for them and serve them on a shishkebab stick. They only get them as a treat AFTER a plate full of other spiralized fresh veggies..
