Avocado Stuffed Burger

So this recipe was born thanks to some awesome farmers I always have at my local farmers market.  Of course I only needed 5 avocados to whip up some amazing Avocado Chocolate Pudding and they always give me extra so I was stranded with extra green fat and didn’t know what to do with them.  I remembered that I had a couple pounds of delicious grass fed ground beef defrosted from TX Bar Organics and just started looking around for inspiration.  Sun-Dried Tomatoes and Lemons caught my eye and I decided that’s where I was going with this one.  And I am darn glad I did, because these came out amazing.  I found myself not putting as much filling in the burgers so I could just eat more.  I am such a fat kid, if you could only see my face when I am cooking in the kitchen, it is either covered with avocado from me licking spoons and bowls, or chocolate from all my brownie creations, etc.  Such a class act I am but I am saving water by licking the bowl, so that’s Paleo right?

Avocado Stuffed Burger

Serves: 3-4
Ingredients
  • 2 pounds grass-fed ground beef from the awesome TX Bar Organics
  • 2 avocados, ripe
  • 1 cup sun-dried tomatoes, chopped NO OIL
  • Juice of 1/2 a lemon
  • Zest of 1 lemon
  • 2 tablespoons black pepper
  • 2 teaspoons sea salt (makes it salty depending on your sun-dried tomatoes)
  • Bacon fat (Optional)
Instructions
  1. Preheat your grill to medium-medium high heat
  2. Put your ground beef in a large mixing bowl and add black pepper, 1 teaspoon of sea salt, and the zest of one lemon
  3. Mix well and then using your hands form into thin patties all the same size (you need them thin because you will be using two of them to make one patty)
  4. In another mixing bowl combine avocados, sun dried tomatoes, lemon juice, and the remaining teaspoon of sea salt.
  5. Mash the avocado and mix ingredients well to get as smooth as you like
  6. Place your avocado mixture on the bottoms of half of the burgers, ensuring you leave room to seal the burgers without it leaking out
  7. Put your other patty over the top of your mixture and pinch the edges of your burgers together to seal all the way around
  8. Now go out and grill to your liking. I normally do about 6-8 Minutes per side on my grill but yours may be different. Ensure you cook evenly on both sides of the burger or you will end up with an undercooked and an overcooked side
  9. While grilling, I drizzle my burgers with bacon grease and it adds an amazing flavor
  10. When done grilling, allow your burgers to rest for 10 minutes and then serve. You can use the rest of your avocado mixture to top your burgers with and go to town
  11. Enjoy!

  1. Just a quick question?? How and does the meat stay together without an egg as a binder like most other burger recipes? Just waitin for my ground beef to defrost so I can make these…. Hurry hurry hurry :)

    Question for you – I am just getting started on the Paleo lifestyle (still working on cutting out grains and such) and I can guarantee my bread obsessed husband is going to have a tough time eating these without a hamburger bun. Any suggestions for an alternative to a hamburger bun? I thought maybe a portobello mushroom, but he outright refused that because the “texture will be different”.

  4. Totally amazing. Have made it twice since. Definitely recommend making lots of the avocado filling to slather on just about anything. I put some on my omelet this morning, but it would make a great dip for veggies and stuff too.

  8. i ALWAYS top burgers with avocado but never though to stuff them! Love the idea and I’m sad that I literally just finished eating a grass fed burger for dinner. Sigh, not I’ll have to wait until breakfast to make this!
