Avocado Stuffed Burger

So this recipe was born thanks to some awesome farmers I always have at my local farmers market.  Of course I only needed 5 avocados to whip up some amazing Avocado Chocolate Pudding and they always give me extra so I was stranded with extra green fat and didn’t know what to do with them.  I remembered that I had a couple pounds of delicious grass fed ground beef defrosted from TX Bar Organics and just started looking around for inspiration.  Sun-Dried Tomatoes and Lemons caught my eye and I decided that’s where I was going with this one.  And I am darn glad I did, because these came out amazing.  I found myself not putting as much filling in the burgers so I could just eat more.  I am such a fat kid, if you could only see my face when I am cooking in the kitchen, it is either covered with avocado from me licking spoons and bowls, or chocolate from all my brownie creations, etc.  Such a class act I am but I am saving water by licking the bowl, so that’s Paleo right?

And just a couple more quick notes before I leave you with this amazing recipe:

Avocado Stuffed Burger

Prep time
Cook time
Total time

Serves: 3-4
Ingredients
  • 2 pounds grass-fed ground beef from the awesome TX Bar Organics
  • 2 avocados, ripe
  • 1 cup sun-dried tomatoes, chopped NO OIL
  • Juice of 1/2 a lemon
  • Zest of 1 lemon
  • 2 tablespoons black pepper
  • 2 teaspoons sea salt (makes it salty depending on your sun-dried tomatoes)
  • Bacon fat (Optional)
Instructions
  1. Preheat your grill to medium-medium high heat
  2. Put your ground beef in a large mixing bowl and add black pepper, 1 teaspoon of sea salt, and the zest of one lemon
  3. Mix well and then using your hands form into thin patties all the same size (you need them thin because you will be using two of them to make one patty)
  4. In another mixing bowl combine avocados, sun dried tomatoes, lemon juice, and the remaining teaspoon of sea salt.
  5. Mash the avocado and mix ingredients well to get as smooth as you like
  6. Place your avocado mixture on the bottoms of half of the burgers, ensuring you leave room to seal the burgers without it leaking out
  7. Put your other patty over the top of your mixture and pinch the edges of your burgers together to seal all the way around
  8. Now go out and grill to your liking. I normally do about 6-8 Minutes per side on my grill but yours may be different. Ensure you cook evenly on both sides of the burger or you will end up with an undercooked and an overcooked side
  9. While grilling, I drizzle my burgers with bacon grease and it adds an amazing flavor
  10. When done grilling, allow your burgers to rest for 10 minutes and then serve. You can use the rest of your avocado mixture to top your burgers with and go to town
  11. Enjoy!

  1. I made these tonight, and they were ok.
The burger meat was great, but the avocado filling was just far too salty.
I think my problem was the sun dried tomatoes. I brought dried ones to make sure they where not swimming in nasty cheap oil, but forgot that the dried ones are generally about 10% salt to preserve them. I soaked them for a bit in hot water, and chopped them into the avocado mix. at the time, it looked a lot of tomato, and wish I had only put in a bit at a time and tasted it, as the saltiness of the tomatoes ruining the avocado filling.

will try again though and adjust the recipe to either exclude the sun dried tomatoes, or use far far less of them.

  2. Did these last night with a pork/venison combo for the meat. SO GOOD!

  3. Made these for my new boyfriend last night. He was super impressed and devoured them! I love these awesome burgers :)

  4. I LOVE your recipes, they always turn out amazing! These are my next challenge tonight, just wondering can I replace the sun dried tomatoes with fresh ones? I can’t get hold of any sun dried where I live! Look forward to trying them, and thanks for the recipe!

  5. I have made these before and they were great, just like everyone else has said. I do love the lemon/sundried tomoato mixture, but I also just love the basic idea of stuffing the avocado inside the burger! I might try some other flavor themes too like chilli powder/chpotle with salsa on top, or even a curry flavor with caramalized onions on top… Anyway, I just wanted to mention in case anyone else was wondering that I don’t hve a grill and these worked great in the oven too. Just laid them on top of some parchment paper on a cookie sheet at about 400 for maybe 10 min or so? Can’t remember exactly but just keep an eye on them and no need to flip. Thanks!

  6. These sound absolutely delicious! Can’t wait to try, any recipe with avocado in the title is a winner with me!

  7. This concept is fantastic – I will most definitely make these again but with some tweaks.

The one major problem I found with this recipe is that the avocado mix (after cooked)
came out way too salty! It was so salty that I had to scrape out the avocado mixture from my burger.

    I would recommend
    1. maybe 1 teaspoon vs 1 tablespoon for the avocado mix.
    2. kick up some more spices for the meat and possible add some very finely chopped onions

Otherwise this is great.. starts to get me thinking of what else I can stuff inside these burgers

  8. this recipe is awesome! oven-baked mine on a foil lined baking tray for 15min at 180C and then 5min under the grill – absolute perfection! loving that you only have the mixing bowls to clean :)

  9. great recipe! oven-baked these on a foil lined baking tray at 180C for 15min and then 5min under the grill, absolute perfection! loving that you only have the mixing bowl to clean :)

Man, these were awesome! I ate them with portabello mushrooms for buns. They looked so good even my non-paleo husband wanted to try one. I gave him a half, because I only made two and he had already had his own two regular burgers. He found it delicious, too. So next time I’ll have to make avocado burgers for the both of us. Thanks for the great recipe!

  11. OMG!!!! This is probably one of the best things I have ever eaten in my entire life!!! Love it so much. I omitted the sundried tomatoes (I just can’t acquire a taste for them), and added garlic and onion. Thanks for the fantastic recipe!

  12. I’ve made this a few times now so I figured I should stop by and tell you…from here on out, I will not be able to make a burger without stuffing it with avocado. Thanks. Thanks a lot.

Seriously though, I didn’t even use the tomatoes and I cooked them inside, and they were so good. Probably going to try some on the grill this weekend. This is only the second recipe I’ve made of yours, but no doubt I will be back for more :)

  13. I found your site through Facebook and Pinterest. I have been needing to find some paleo gluten free recipes for my family so the timing couldn’t have been any better. I made your advocado burgers last week for my family. I did not have the tomatoes on hand so I sustituted with some fresh spaghetti sauce I had on hand but other than that followed the recipe to a ‘T’. They were the ‘bomb’!! ;) We LOVED them and are not big fans of advocado either! We will be having these on a regular basis now. Thanks!!

Why did i wait so long to make these…amazing

  15. Loved the recipe. I decided to make these this night and they were amazing. The first bite oozed the warm comforting avocado and it melted straight away. And the blend of the lemon and beef combined so well with the avocado. I seriously recommend whoever is reading this to try this recipe. And don’t hold back on the pepper it adds a wonderful smokyness to these burgers when they brown on the grill. Honestly even though this recipe was simple it was oh so intoxicating. I made these on grilled eggplant as buns with a little bit of bleu cheese crumbled on them. Although next time I might try goat cheese. But anyway enough of the sexual food talk. Thanks for the awesome recipe, I really enjoyed. And I love the blog by the way. We both have a very similar story when it comes to coming of health you and I .

  16. Great recipe and great site! Quick question: Why do you say no oil on the sun dried tomatoes? I was forced to use store bought olive oil packed sun-dried tomatoes and made sure to drain off as much of the oil before mixing. The recipe turned out fine, so i’m left wondering, “Could it have been better if I didn’t have the oil?”

  17. Killer! I made them last night, and even my kids (who were skeptical initially) LOVED them. Going to have a leftover one for breakfast. Thanks, and keep it up.

  18. What an awesome idea, can’t wait to try it!

  19. What a wonderful idea, can’t wait to try it!

  20. Jesus-tap-dancing-Christ…….. These are AMAZING! Thank you sir for another awesome recipe!!

  21. Just a quick question?? How and does the meat stay together without an egg as a binder like most other burger recipes? Just waitin for my ground beef to defrost so I can make these…. Hurry hurry hurry :)

  22. Christina D says:

These look fantastic! I’m a huge avocado addict!

Question for you – I am just getting started on the Paleo lifestyle (still working on cutting out grains and such) and I can guarantee my bread obsessed husband is going to have a tough time eating these without a hamburger bun. Any suggestions for an alternative to a hamburger bun? I thought maybe a portobello mushroom, but he outright refused that because the “texture will be different”.

  23. Caveman, made these tonight, and they were incredible! Super delicious, and enough still for leftovers! Even goes well with leftover Beastly BBQ Sauce… but then again, what doesn’t? Thanks again!

  24. Kim Dowse says:

we just made these for dinner…awesome! truly amazing

  25. freaking genius!

  26. Greek4pearl says:

Totally amazing. Have made it twice since. Definitely recommend making lots of the avocado filling to slather on just about anything. I put some on my omelet this morning, but it would make a great dip for veggies and stuff too.

  27. Avocado. Be still my heart. What a genius idea. I’m not usually a big burger person, but this is a must!

  28. Anita Hall67 says:

OMG!!! So AMAZING!!! Thank you for all that you!! You ROCK!!

  29. Jeffrey says:

    Wonderful!!

  30. ted wagner says:

I made these last night and ate 2 before I bothered looking up from my plate. Holy mackerel, were they good! I have 2 more of waiting for me tonight. This will become one of my “go to” staples recipes. Thanks!

  31. emikoala says:

Just made these tonight! An hour later I’m still basking in the afterglow. Wow!

  32. when are you coming to south florida so you can cook this glorious food? lol

  33. Jessica Keechle says:

I just recently made the jump to Paleo and found your blog. Made these for dinner tonight and it was like a little piece of Heaven in my mouth. Thank You!!

  34. This sounds HEAVENLY. Love avocado (who doesn’t?). I’ll definitely be trying this.
    Great site!

  35. derekbeau says:

Looks amazing. I too love avocados on top of burgers (and absolutely anything else). Just picked up 4 yesterday… as soon as they’re ripe I may have to make this.

  36. i ALWAYS top burgers with avocado but never though to stuff them! Love the idea and I’m sad that I literally just finished eating a grass fed burger for dinner. Sigh, not I’ll have to wait until breakfast to make this!

  37. I found this website and your Facebook page from a link on Pinterest. Funny how things work. I’ve been interested in Paleo from listening to Jimmy Moore’s podcast and last night was thinking I need to jumpstart my stagnating program with a sugar detox–I had really been slacking. Meant to be. lol Thank you so much.
