Coconut Chocolate Chip Cookies

This is one of the first Paleo recipes I ever tackled after starting this lifestyle and drooling over the daily food pornography from my Amazing Friends Hayley and Bill at The Food Lovers Primal Palate.  Here are their delicious Coconut Chocolate Chip Cookies.  The best part of these is the raw organic honey keeps the insides of these chewy for days and its like no other cookie texture I have ever had.

Ingredients
Instructions
  1. Preheat oven to 375 (That's degrees Fahrenheit with the oven set to bake for you non kitchen people haha)
  2. In a large bowl, combine coconut oil, raw honey, eggs, vanilla extract, and sea salt. (To make your life easier, in a small bowl on the side, combine the raw honey and coconut oil and melt in the microwave before mixing it in)
  3. Add in your coconut flour.
  4. Stir in the shredded coconut and chocolate chips.
  5. On parchment lined baking sheets, drop heaping tablespoons of cookie batter.(Ensure you form them to look like the cookies you want for a final product as these do not rise or spread like conventional cookies, which also means you can place more on a baking sheet without worrying about them touching)
  6. Bake for 12 minutes or until golden brown.
  7. Remove from the oven, transfer to a cooling rack and then enjoy with a nice cup of coconut milk.

  1. These are the BEST cookies I’ve found that use coconut flour. Most suck the moisture right out of you. They stirred up quickly, which is a plus. I used sucanat instead of a liquid sweetener like honey or maple syrup. They were ALMOST too sweet. Perfect for an after dinner sweet treat.

  2. I might hate you for bringing these into my life. I have my second batch this week in the oven (I live alone, hence the problem) and I love them. I love them so much that on discovering I was out of shredded coconut I decided to make them anyway but use almonds. I have a problem. Thank you these are delicious.

  3. Hello! Thanks for the recipe- the first 9 are in the oven now. Something went oddly though because my batter was very thin, not cookie batter like but more like pancake batter. So- I added (twice) a half cup of ground rolled oats (so twice half a cup to equal a full cup). The batter was then more stable but was still a loose chunky. I live in Holland- who knows- maybe being at sea level matters..?

    1. The flour being coconut flour is probably important. I don’t know if you did or how much you used. Coconut flour is very absorbent and usually soaks the liquid up like instant mashed potatoes. :) I also misread this and used three eggs instead of four. There needs to be a dash in there or something to clarify.

  4. I’d like to make these for a cookie exchange – could you say about how many cookies this makes? I need to know if I should double / quadruple the recipe to make enough for a crowd!

  5. With some recent findings coming out about the health benefits brought by coconut this cookies are very timely. Thankyou for the tip on the raw organic honey. Didn’t know that it can be a natural preservative. Can’t wait to try this out with my kids, I’m sure they will love it.

    We have tried to make these twice and both times the batter looks to have split. We tried baking the second batch to see and the top half looked great but underneath it was more the texture of an omlette. Any ideas?
    We have made loads of your recipes and they have all turned out fantastic. Hope you can help as these look fantastic.

    1. Can’t say for sure but anytime I’ve tried to use homemade cocnut flour in recipes it splits when baking, like you described. I invested in some finer ground and it works great.

    Help! I have tried twice to make these and both times the batter looks like it splits, we tried cooking the second batch and the top looked ok but the bottom had more of an omelette texture. What am I doing wrong? Desperate to try these as we have tried a number of your recipes and all have turned out fantastic but we are scratching our heads on this one.

    1. Neil I have never heard of that, this recipe is made all the time with the utmost success. Unless I watched you I am clueless, unless you aren’t using raw organic honey and it is too liquidy. The other possibility that is if you heat any of your ingredients that they are cooking the eggs before you bake them

  16. These are so delish! I have a craving for them and was going to make them but just realized I am out of eggs and considering there is the biggest snow storm ever going on right now….they will have to wait until tomorrow :( The Caveman Feast cook book is mandatory to any paleo kitchen!

  17. Scrumptious! So quick to make, sustaining so I wont need another one…for a wee while :0) I used the sabayon method to mix the eggs & oil…is that what you do C.Caveman?
    Also I used 85% dark organic fair trade chocolate…divine! Thanks for your awesome recipe, will be trying others of yours :D

    1. Well Sheryl if I had the slightest inclination as to what the sabayon method is, I would concur. So in other words, I mix my stuff whatever way seems faster :) Hope you love more of my recipes :)

  20. Seems like maybe I did something wrong! The dough was very dry and wouldn’t hold together well. I added a couple tablespoons of water and it helped some but I still ended up just making a pan cookie. When baked they are fairly dry and somewhat crumbly. If that’s how they should come out, then I am good, otherwise… any ideas? Thanks for all your great recipes!

    1. No it is not supposed to be like that. I have never added water but they always come out perfect as long as I use raw organic honey. Mine are never dry, crumbly or bland. The raw honey keeps them moist

    2. Mine were dry too, but then I realized my shredded coconut said “reduced fat” on the bag. I didn’t notice that when I bought it. Also I used agave cuz that’s what I had on hand. I’ll stick with raw honey next time.

  21. I’m very new to paleo and just found your blog, which is awesome btw!! I don’t live near a whole foods or trader joes or any kind of organic selling grocery store. Where can I find almond flour, coconut oil and coconut milk? And how do I know what brand to buy? Thanks!

  22. I just made these and they are FANTASTIC! i used 1/3 cup agave syrup instead of honey b/c that’s what i had on hand

    1. I did that too! And I subbed bananas and unsweetened cocoa powder in instead of chocolate chips. TO DIE FORRR!

  23. It sure would be nice to have a “print” option for the recipes. I cook a lot where I don’t have computer access so need printed versions. I’m excited to try this one!

  24. I have been doing Paleo for 2 weeks now, and was seriously craving some sweets.

  25. There's no note on when to add the coconut flour…I'm assuming with the liquid ingredients? Then the coconut and chocolate chips?
