It’s no secret that some of my favorite recipes on the blog are crockpot recipes. Since I started my journey into cooking and then Paleo, the crockpot has been my go to tool that is easy to master and always delivers. There was a point where I owned 7 crockpots at once, then I got engaged and couldn’t have all my bachelor toys anymore. We only have 4 now. I seriously love crockpot recipes so much I had an infographic made and built a dedicated page to crockpots. These crockpot stuffed peppers are one of my favorites so I hope you enjoy.
Crockpot Stuffed Peppers
When it comes to cooking, these crockpot stuffed peppers are about as easy as they come. Use your food processor to chop up all your veggies, combine with your meat, stuff the peppers and walk away. There are so many different ways to make this recipe as well. I used ground beef but you could use turkey, chicken, pork, venison, bison or anything else you can think of. I wonder if we could make just bacon stuffed peppers?

I always want to make sure we don’t waste our food. We created a storage guide for produce to help you keep your food fresh as long as possible. In this case, store your bell peppers inside the refrigerator in a plastic bag for 3-4 days.
- 4 bell peppers
- 1 lb ground meat
- 1/2 head of cauliflower
- 1 onion, diced
- 1 carrot, diced
- 4 cloves of garlic, minced
- 6 ounces tomato paste
- 1/4 cup homemade italian seasoning blend (equal parts marjoram, thyme, rosemary, savory, sage, oregano, basil)
- salt and pepper to taste
- 1/4 cup beef stock
- Pulse your cauliflower, onion, carrots, and garlic in the food processor to blend as fine as possible. Do it seperately if your food processor isn't large enough. If you don't own one you can dice everything as small as possible by hand
- Cut the tops off of your peppers, keeping them intact and clean the seeds out
- Mix your vegetables in a mixing bowl with your meat, tomato paste, seasonings and salt and pepper
- Once all ingredients are combined well, spoon the mixture into your peppers and level off at the top of the pepper
- Place the peppers in your crock pot and put the tops of the peppers on them
- Pour your liquid in the bottom of the crock pot and cook on low for 6-8 hours
