So I am very aware some of you are not venturous, so you get an amazing Beef tongue recipe with a mild insight into my life in case you don’t want to make this.  But I challenge each and everyone of you too, I only did cause my Mr. and Mrs. Miyagi, the power couple Primal-Palate talked me into it and I am glad they did.  Since then I have shared this recipe with two different people who both made it and loved it, and they rarely eat beef, never mind tongue.  So get on and make the recipe and read my post :)

***DISCLAIMER*** My grammar probably sucks, my spelling probably sucks, my story probably doesn’t flow but neither do my thoughts most of the time so I apologize in advance.
Wow so what a week it has been.  It’s funny the things you can learn about yourself and your body when you have been following a strictly Paleo Diet.  It is absolutely amazing to me how vocal my body is when it does not like something I eat or ingest.  What I am referring to today is last Sunday when I was diligently working on my Grilled Guacamole post sitting in the same coffee shop I am in right now. 

A little back story first.  As some of you may know I play a United States Marine on Active Duty everyday first and foremost before I even think about touching this website.  It is quite stressful managing both but I do my best.  The 70 minute commute every morning at 445am has at least afforded me the opportunity to start educating myself with awesome pod casts from the likes of Robb Wolf and Diane from Balanced Bites which is always a nice reminder of some basic Paleo principles I may lose sight on but back to the topic.  I had a very busy week last week not getting home until at least 7pm every night not leaving me much time to get this site updated or get you guys any new recipes.  Because of this I forced myself into overdrive on the weekend to get some great content out to you.  This is where I started not being so beneficial to myself.
All of my weekends are pretty much the exact same, I come home Friday night, take my cammies off, and cook a nice dinner and relax.  I get a good night sleep to start my Saturday morning off right with the Group ass kicking at Cutting Edge Kettlebells, then go get myself an unsweetened Almond Milk Latte from the Amazing Ryan Bros Coffee in Temecula, CA with my BFF Jen, then we venture out to the farmers market for my produce shopping for the week.  I normally end up home around 11am and the cooking begins.  I will try and knock out at least 3 Recipes on Saturday and 2-3 on Sunday while begging neighbors and friends alike to come over and eat them to make sure they are post worthy.  Throughout this process, I am attempting to cook and start the posts for the recipes, while taking photos, doing dishes, and attempting not to eat everything I make, which doesn’t always get accomplished lol.  So back on topic for the second time, but I think this ties in to help you understand.  When I was done creating, cooking, writing, photographing, cleaning, and eating on Saturday I sat down on my computer to start the posts and respond to emails and comments.  And yes I am pathetic, at 27 and single I spend my Saturday nights editing photos, typing blog posts, and coming up with new recipes for everyone ha ha.  So what happened was I tried cramming everything I had to do into Saturday night eventually falling asleep on my Mac at around 2am and waking up around 530am thanks to my internal clock with keyboard impressions in my cheek.  Just picture that right.

So here is where my body started yelling at me.  I was working on 3 hours of sleep, didn’t eat breakfast and went straight to the awesome Ryan Bros Coffee to hinder my body some more by stuffing it with two large almond milk lattes over the course of 4 hours while working on the website.  No biggie right, my body was loving me for that.  I finish my website marathon and head to the farmers market to pick up some Bacon from the AMAZING MM Livestock, then headed home.  Well here is where it got interesting, while driving and rocking out to some Bruno Mars I just broke down, HARD.  I started crying while driving and could not stop, for an hour and I had no idea why.  I got home, texted my BFF Jen to come see me and tried to occupy my mind by cleaning, cooking, eating etc.  Well that didn’t work and I had an emotional crash.  Jen came and Jen left and I proceeded to self sabotage because none of us are perfect and as 99% Paleo I am, I couldn’t fight it anymore.  So 16 ounces of coconut cream and 16 ounces of Enjoy Life Chocolate Chips later (Sorry PaleOMG, I didn’t have almond butter :( )  To get this unsad real quick and head off on a tangent, if you have not gone over to PaleOMG to check out Juli’s bad ass recipes and posts, your missing out, GO.  She is like me in a Hot Chicks body and I am blessed to have her as a friend, that’s all, just saying.  Plus she can kick my ass in workouts so thats a plus too :)

So needless to say my Sunday was useless and I could not figure out what to do, I layed on the couch basking in my own sorrow waiting for someone to come pick me up or somehow to be miraculously healed.  Yea that didn’t happen, I woke up Monday morning feeling a little better but had to fix it quick.  Caffeine, cut out, sleep back to at least 8 hours a night, Whole 30 start and sure enough within 2 days I was feeling like a million bucks even with the daily stresses in my life.  During my awesome podcast session in the morning I also learned something interesting from Dr. Kurt Harris that a good way to tell if you are over training or just having excess cortisol is to take your resting heart rate first thing in the morning, and if it is elevated then you could be over training or having excess cortisol production which obviously mine was tied to stress.  Well he was right.  So here is what I learned, SLEEP is the most important thing.  If you don’t sleep enough combined with the workouts you do, the stresses of life, the cooking, the cleaning, the eating the etc, nothing is going to work.  You are going to suffer from Adrenal Fatigue and be an emotional mess.  

So as I sit here drinking my DECAF Almond milk latte blabbing on with some excessive ADHD, hoping not to bore you, I hope that you have taken from this one simple thing.  Our bodies are no different than our cars, they run as efficient as we allow them.  Go try and pour oil in your gas tank and let me know how that goes.  Our body is the vessel which carries us throughout the world everyday and is the most important thing we have, treat it well.  The dishes can wait, the website can wait, the workout can wait, the yard can wait, the laundry can wait, your body can not.  If it wants to sleep, let it.  If it is hungry feed it with what you should, and if its thirsty drink water.  Then reap the benefits and pass on this amazing knowledge and your success. 

Crock Pot Beef Tongue with Roasted Pepper Sauce

Serves: 4
Ingredients
Tongue
  • 1 beef tongue
  • 1 onion, sliced
  • 3 garlic cloves, crushed
  • 3 bay leaves
  • sea salt and pepper
  • Water to cover tongue in crockpot
Sauce
  • 1 roasted red pepper, peeled and diced
  • 1 roasted serrano chili pepper, diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 20 ounces tomatoes, sliced
  • 6 ounces tomato paste
  • 1 tsp thyme
  • 1 tsp oregano
  • salt and pepper to taste
Instructions
Tongue
  1. Wash your beef tongue under cold water and pat dry
  2. Line the bottom of your crock pot with your onion, garlic, and bay leaves
  3. Lay the tongue on top and generously season with salt and pepper
  4. Add as much water as you need to completely submerge the tongue in water
  5. Cover and cook on low for 8 hours
  6. Remove from crock pot and remove the skin of the tongue
  7. Shred the beef and serve with the sauce below
Sauce
  1. In a sauce pan over medium heat, saute your onions, garlic, red pepper, and serrano chile until the onions are translucent
  2. Add in all remaining ingredients and stir well
  3. Reduce heat to low and simmer for 30 minutes
  4. You can leave the sauce chunky as is or transfer to a blender and make more of a smooth sauce, the option is yours
  5. Serve over your shredded tongue and enjoy

  5. Wow! After reading these finger licking good recipes I used this recipe to ‘devirginize’ my crockpot. When I threw in the tongue, and peeked after a couple of hours I really wondered what the result would be. But…. after the 8 hours the tongue came out perfect. The texture is so soft, tender and it tastes great!! Thanks for sharing this recipe!!

  7. Yet again another great recipe!!! Thanks George!! Made the Beef Tongue last night. Like many others I was hesitate about the whole thing. But I overcame my fear and dug in. I’m glad I did. It was delicious!! I followed the direction to a T with the ingredients. Cooking time I had to change up though, only because I was afraid that it wasn’t going to be fully cooked after the 4th hour. I put it on high for the remaining time. Very tender and not a piece of it was dry. The meat tasted almost like the neck bone you use for soup. The sauce was delicious as well. The two put together almost tastes like spaghetti. Since we have leftovers I am going to heat it up tonight for dinner and serve it with spaghetti squash. Thanks again!!!

    I made this for the first time last night and I think I screwed something up. I let my tongue go a little longer than you recommended (a little over 9 hours because it was over 4 lbs) and then I pulled the tongue out of the broth and put it in the fridge to cool. I just started to shred it for dinner tonight but the texture is really weird. It’s like a thin layer of shredded beef under the skin and mush on the inside. The flavor is nice, but honestly the texture is like grainy mush or something. Is this normal?? What should I do differently?

  10. I just submitted my co-op order today and placed tongue on it because of you! I heard you talking about it in the podcast with Abel James, and I just happen to be the adventurous type, especially when it comes to food. I JUST got my very first crock pot yesterday, and intend to devirginize it with your pulled pork recipe, while waiting to pick up my co-op order next week. Love your writing style, seems you write like you think, which is what I do, too. And don’t worry about being single and 27 sitting at home and cooking and taking pictures of your food. I’m pretty much in the same boat, but I don’t have a blog that I’m doing it for! I just do it because it makes me happy. :)
    I’ll let you know how the tongue comes out!

  11. I love trying things that I haven’t had before, so this was a natural choice. Great recipe! I increased the garlic a little bit and added several whole okra to the crock pot.
    Due to a lack of variety of peppers locally I simply used a small can of tomato paste, 3/4 of a red bell pepper, Mexican chili powder, and a dash of curry powder. This was all thrown in a pan and slowly boiled down with some water, then blended until smooth.
    I’ve got a bowl of the veggies, meat, and sauce sitting in front of me as we speak. It’s delicious! Thanks for the great recipe.

    Ah. I am going to adapt this, but I love the concept. I do think food at the shreddy-stage is less tender than just before it gets there (excepting a few things like lamb), so I'm not going to crock pot it quite as long. But I'm pretty much otherwise going to follow this. Thanks. Tongue is one of my favorite bits on an animal.

  15. I want to NOT be freaked out by the beef tongue since I can eat something encased in an intestine and really…which one of THOSE is more disgusting!?! But I can barely tolerate handling pork tenderloin because of its beef tongue appearance. LOL

    I have totally been in your position…exhausted, overwhelmed, eating crap that my body is obviously hating me for eating, …. It's a great reminder for why this lifestyle works for me.

    And can I say that I am confused as to why you are single??? Way too many single primal hotties!

  18. Great post. Sleep is so important yet seems to be something everyone tries to push off. I notice a big difference when I don't get enough…actually I'm pretty sure everyone else notices too LOL.

    I don't know if I'll ever get up the nerve to try tongue, it just freaks me out looking at it uncooked. The after photo looks amazing though :)

    Right on. I am a midwife and it is the same story with new mamas. Not enough sleep. I explain that anyone who is sleep deprived can break down. It is something that is done to POWs as well. Sleep deprive them and you can break them down! Glad you got your wake up call (so to say). Your picture though…. wowsa~!~

  22. Mmmm, I made tongue tacos for the first time a couple weeks ago with the tongue from the grassfed beef we bought a few months back – and WOW, I've been missing so much! It was the most tender, amazing tasting cut of meat I've ever had. I told DH I wish there were 5 more tongues in the freezer…
    And keep up on that good sleep…adrenal fatigue is nothing to fool with :-(

So many people are sleep deprived these days, and it's a major contributing factor to car accidents, violence, and lots of other bad decisions. You are so right, everything else can wait! :-) Oh, and I love the tongue recipe!
