Coconut Griddle Cakes

These are about as simple as any Paleo recipe could be for breakfast, You can whip this up from start to finish in under 5 minutes if you don’t count your pan preheat time.  Plus it is absolutely amazing.

Instructions
  1. Mix the egg, honey, and coconut in a [amazon_link id="B001715PN8" target="_blank" ]mixing bowl[/amazon_link] until you get a nice batter. If the batter is a little dry just add another egg and mix well
  2. Using a [amazon_link id="B000NBWRU2" target="_blank" ]frying pan[/amazon_link], heat a small amount of coconut oil over medium heat and cook your griddle cakes like you would a regular pancake. The smaller you made them the easier they are to flip.
  3. Serve with a fresh home made syrup of your choice or eat just like is.
  4. Enjoy

These griddle cakes are really dry by themselves if you over cook them so feel free to spice them up however you see Paleo fit.  I melted down frozen strawberries and blended them into a strawberry syrup.  Some other options for remaining paleo would be 100% pure maple syrup, ghee, or a melted 100% organic raw honey.  The choice is your’s, so enjoy this simple yet delicious recipe.

  1. What’s the best way to grind the shredded coconut? And could you use coconut flour instead? But I prefer to use shredded coconut since I’ve got bags and bags of the stuff.

  2. I made these this morning. I changed a few things after your note about dryness: I kept the coconut shredded (instead of grinding), mashed a banana, and added some cinnamon. I topped them with some local honey, strawberries, and sunflower seed butter – delicious!

  3. These were tasty, but following the recipe as you stated (even with the extra egg) only yielded a bowlful of powder. I had to add water and more honey, but they still didn’t seem to come out right. Do you have any suggestions?

  6. Just made these using 1/4 cup apple sauce and 1 tsp cinnamon. Probably could have used another egg or something else because they ended up being fried coconut cakes instead of pancakes.

  8. These are genius…. never in a million years would you think that something so simple to make would have such an incredible texture! I used 2 eggs and they were perfect. I can see this being a great vehicle for all manner of toppings, both savory and sweet (can you imagine caramelized bacon and onion jam atop these beauties? Probably too much awesome to even fathom ;) )

      1. When you said that they could be dry I cut back the coconut to 3/4 c and added 1/4 -1/3 c of ricotta cheese. I also used Truvia instead of honey. Not dry at all. I am on a grain free diet for my health. Thanks so much for this simple recipe :)

  9. These were such a welcome option…I have missed pancakes! I am 5 days into my 21 day sugar detox so I skipped the honey and melted ghee on top…so good…with recipes like this one I don’t miss the grains or sugar at all!! I love your site!

  10. These are fantaaaaaaastic! I doubled the recipe but increased the eggs to 4 per cup of coconut, then added lots of vanilla extract and and around 2 tbsp of coconut flour. So so so good, and like everyone else said, so filling! Thanks for this. :)

For even quicker tastiness on the go, cut back shredded coconut to 1/2 cup, and add remaining ingredients and a splash of vanilla extract to microwave safe bowl, mix, and pop in the microwave for 1 1/2 minutes. Smear pat of butter on top, drizzle with bit of agave nectar and you’re good to go. Although cooking these on the griddle is still way better, this faster version is still just as good.

Also, check out Thai Kitchen's website, they have a lot of recipes on there that can be Paleo friendly by simply switching out a few small ingredients, including the Coconut Chicken soup I'm making later today. Can't wait =)

  16. Just made these this morning but added 2 eggs, about 1/4c coconut flour, tbs agave nectar and some coconut milk until desired consistency was met. YUM! Couldn't believe how filling these were as I had 3 on my plate with some bacon, but only ended up eating 2. P.S. > getting into this lifestyle one dish at a time, and your recipes/website are by far the best I've seen on here. Keep the tastiness coming! ;)

  18. I started following the paleo diet about a month ago and saw your blog a few weeks ago. You have been so incredibly helpful and really inspirational, especially with your grocery list! I looked like an idiot in the store because I sent your list to my iPad and walked around cradling the iPad and trying to find all the items haha. Anyway, I made these for the first time today and was not expecting them to be as good and filling as they are! So delicious and easy to make in the morning! My husband – who has not started the paleo diet – is going to love these! I think I'll add some ginger or cinnamon next time because I'm a ginger fiend! thanks so much for the great recipes! I'm certainly going to be trying another!
